1/2 gallon vanilla ice cream, softened
1 graham cracker crust (9 inches)
1/2 cup English toffee bits or almond brickle chips
SAUCE:
1 cup sugar
1 can (5 ounces) evaporated milk, divided
1/4 cup dark corn syrup
1/4 cup butter, cubed
1/8 teaspoon salt
1 tablespoon cornstarch
1/2 cup English toffee bits or almond brickle chips

Steps:

  • Spread half of the ice cream into crust. Sprinkle with toffee bits. Spoon remaining ice cream over top. Cover and freeze until firm., In a large saucepan, combine the sugar, 3 tablespoons milk, corn syrup, butter and salt. Bring to a boil over medium heat. Combine cornstarch and remaining milk until smooth; gradually add to sugar mixture., Return to a boil, stirring constantly. Cook and stir for 1-2 minutes or until thickened. Cool to room temperature, stirring several times. Stir in toffee bits. Refrigerate until serving., Just before serving, transfer sauce to a small microwave-safe bowl. CRUST
1 1/4 c graham crackers, crushed
1/3 c butter, melted
1/4 c white sugar
FILLING
8 oz cream cheese
14 oz can sweetened condensed milk
12 oz frozen whipped topping, thawed
12 oz jar of caramel ice cream topping
optional- hershey syrup
BRICKLE
1 c all purpose flour
3/4 c quick cooking oats
1/4 c brown sugar, lightly packed
1/2 c butter, melted
3/4 c chopped pecans

Steps:

  • 1. Preheat oven to 350 degrees. Combine crust ingredients in medium bowl. Lightly pack into bottom of 9" spring form pan. Bake 6 minutes and then cool completely.
  • 2. In Large bowl, beat cream cheese and condensed milk until smooth. Fold in whipped topping. Set aside. Preheat oven to 400 degrees. In large bowl- combine flour, oats, brown sugar, melted butter,and pecans. Mix well. Lightly pat on cookie sheet. Bake 10 to 15 minutes or until lightly brown. Crumble while hot. Watch, it will burn really easy. Cool Completely.
