Time 5h21m

Yield 12 serving(s)

Number Of Ingredients 12

1 1/4 cups graham cracker crumbs
1/3 cup butter, melted
1/4 cup sugar
1 cup all-purpose flour
3/4 cup quick-cooking oats
1/4 cup brown sugar
1/2 cup butter, melted
3/4 cup chopped pecans
1 (8 ounce) package cream cheese
1 (14 ounce) can sweetened condensed milk
1 (12 ounce) container frozen whipped topping, thawed
1 (12 ounce) jar caramel topping

Steps:

  • For the crust: Preheat oven to 350 degrees.
  • In medium bowl, combine graham cracker crumbs, melted butter and sugar until well mixed. Press lightly into bottom (compressing too hard will make it hard to cut) of a 9 inch springform pan (may, also, use a 9x13 inch pan). Bake 6 minutes, until set. Cool completely.
  • For the butter brickle: Preheat oven to 400 degrees.
  • In a large bowl, combine flour, oats, brown sugar, 1/2 cup melted butter and pecans until well mixed. Lightly pat onto a baking sheet. Bake 10 to 15 minutes, until light brown. Crumble while still hot. Cool completely.
  • For the filling: in the meantime, in large mixing bowl, beat cream cheese until smooth. Beat in condensed milk until well blended. Fold in whipped topping.
  • Spread half of the cheese mixture over the crust in the springform pan. Sprinkle half of the prepared butter brickle over the cheese mixture and spread half of the caramel sauce over that. Repeat layers. Freeze for at least 4 hours or overnight until firm, remove pan sides and serve cold. If the caramel sticks to the side, try dipping your knife into hot water and running it around the rim of the pan to loosen.

Tips:

  • For the best flavor, use high-quality vanilla extract and butter.
  • If you don't have a candy thermometer, you can test the sugar syrup by dropping a small amount into a glass of cold water. If it forms a soft ball, it is ready.
  • Be careful not to overcook the sugar syrup, as it can quickly turn from golden brown to burnt.
  • If you don't have a blender, you can crush the toffee pieces in a food processor or with a rolling pin.
  • For a richer flavor, use dark chocolate instead of milk chocolate.
  • You can also add other mix-ins to your frozen delight, such as nuts, dried fruit, or chopped candy bars.

Conclusion:

This butter brickle frozen delight is a delicious and refreshing treat that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. Whether you like it simple or loaded with mix-ins, this frozen delight is sure to be a hit. So next time you are looking for a sweet treat, give this recipe a try. You won't be disappointed!
