Categories     main-dish

Time 17m

Yield 10 to 12 servings

Number Of Ingredients 10

3 tablespoons unsalted butter, plus extra for baking dish
4 ounces finely grated Parmigiano-Reggiano (about 1 cup)
1/4 cup unseasoned dry bread crumbs
1 pound macaroni
3 tablespoons thinly sliced sage
6 ounces shredded Gruyere cheese
4 ounces shredded aged Cheddar
4 ounces mascarpone cheese
3/4 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • Heat oven to broil and arrange rack in top. Butter a flameproof 9 by 9-inch baking dish and set aside. Melt 1 tablespoon of the remaining butter and mix in a medium bowl with 1 cup of the Parmigiano and all the bread crumbs until thoroughly moistened; set aside.
  • Bring a large pot of heavily salted water to a boil. Add pasta and cook for half the time indicated on package.
  • Meanwhile, melt remaining 2 tablespoons butter in a large frying pan over medium heat. When it starts to foam, add sage and cook until crisp and butter begins to turn golden brown. Remove from heat and set aside until pasta is ready. Reserve 1 cup pasta water and drain pasta.
  • Return pasta to pot and place over low heat. Stir in sage butter, reserved pasta water, remaining 3 cups Parmigiano, Gruyere, Cheddar, mascarpone, and salt, and season with freshly ground black pepper. Stir constantly until cheeses are evenly melted and the pasta looks well coated. Turn pasta into baking dish and evenly top with bread crumb mixture. Place under broiler until mixture bubbles and top is browned, about 1 to 2 minutes. Let sit 5 minutes before serving.

CLASSIC BAKED MACARONI AND CHEESE

Classic Baked Macaroni and Cheese image

Think Stouffer's without the freezer. While it can be enjoyed straight from the pot, this macaroni and cheese has a slightly looser sauce than the stovetop variety to allow for thickening in the oven. Bread crumbs, while optional, make it truly spectacular.

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 14

1 pound elbows, shells, cavatappi, farfalle, fusilli or other short, tube-shaped pasta
Kosher salt
4 tablespoons unsalted butter
1/4 cup all-purpose flour
4 cups whole milk
1 clove garlic, finely grated
1 teaspoon smoked or hot paprika
Freshly ground pepper
12 ounces sharp or white Cheddar cheese, grated
12 ounces fontina or Gruyère, grated
1 cup coarse bread crumbs or panko
4 tablespoons melted butter or olive oil
1/4 cup finely grated Parmesan cheese (optional)
Kosher salt and freshly ground pepper

Steps:

  • Cook pasta in a large pot of salted boiling water until it's barely al dente. (It should be more al dente than your average pasta: It's going to continue to cook in the oven.) Drain and set aside.
  • Meanwhile, heat butter in a medium pot over medium heat. (The pot should be large enough to hold all the pasta when cooked.) Whisk in flour and cook, whisking constantly, until the flour is foamy and just starting to turn a light golden brown, about 4 minutes. Slowly whisk in milk to avoid clumping. Add garlic, paprika and season with salt and pepper. Bring to a simmer, whisking constantly and paying special attention to the edges of the pot to make sure the flour mixture is totally incorporated.
  • Add grated cheese and whisk to blend until the cheese is completely melted. (The sauce will seem thick at first and thin out as the cheese melts; it will thicken while it bakes.) Season with salt and pepper and add cooked pasta, stirring to coat well.
  • Heat oven to 425 degrees. Line a rimmed baking sheet with aluminum foil (to catch any cheesy drips).
  • Make the optional topping: Combine bread crumbs, melted butter and Parmesan, if using, in a medium bowl. Season with salt and pepper and, using your hands, mix well to ensure the bread crumbs are evenly coated.
  • Transfer the macaroni and cheese mixture to a 3-quart or 9 x 13 baking dish and scatter bread crumbs, if using, evenly over the top. Place on prepared baking sheet and bake until macaroni and cheese is bubbling, thickened and creamy, and bread crumbs are evenly golden brown, 25 to 30 minutes. Let cool slightly before serving.

1 small butternut squash (about 1 pound), peeled, seeded, and cut into 1-inch cubes (about 3 cups)
1 cup homemade or low-sodium canned chicken stock, skimmed of fat
1 1/2 cups nonfat milk
Pinch of freshly grated nutmeg
Pinch of cayenne pepper
3/4 teaspoon coarse salt
Freshly ground black pepper
1 pound elbow macaroni
4 ounces extra-sharp cheddar cheese, finely grated (about 1 cup)
4 tablespoons Parmesan cheese, finely grated (1 ounce)

Olive-oil, cooking spray

EASY BUTTERMILK DELUXE MACARONI & CHEESE

Easy Buttermilk Deluxe Macaroni & Cheese image

I wanted to make a small amount mac & cheese but only had Light buttermilk, not regular milk. Then I figured it would work just as well and better yet wouldn't require butter. The buttermilk did work fabulously! This is a creamy, gooey kind of mac & cheese similar to Velveeta mac & cheese , not the baked crusty kind.

Time 20m

Yield 4 , 4 serving(s)

Number Of Ingredients 8

1 cup uncooked macaroni
1 cup light buttermilk
1 cup cheddar cheese, shredded
2 tablespoons cornstarch
1/2 teaspoon kosher salt
1 teaspoon mustard powder
1/2 teaspoon paprika
1/4 teaspoon turmeric

Steps:

  • Boil 2 cups of water and lightly salt it. Cook the macaroni for 8 minutes for an al dente texture then drain.
  • In the empty pot/another heavy-bottom saucepan, mix the buttermilk and cheddar cheese together, keeping the heat low for now.
  • Add the spices and cornstarch, then kick the heat up to medium and let simmer for about 5 minutes, stirring occasionally.
  • You'll know when the cheese has melted and the cornstarch did its work when the sauce is nice and thick.
  • Simply pour it on the mac and cheese, mix it up, and it's ready to eat! Awesome with broccoli and cauliflower too.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the final dish will be. Use fresh vegetables, real butter, and high-quality cheese.
  • Don't overcook the noodles: Noodles should be cooked al dente, or slightly firm to the bite. Overcooked noodles will be mushy and unpleasant.
  • Use a large skillet or pot: This will help to prevent the noodles from sticking together and will ensure that they are evenly cooked.
  • Add the cheese gradually: This will help to prevent the cheese from clumping together. Stir constantly until the cheese is melted and smooth.
  • Season the dish to taste: Add salt, pepper, and other seasonings to taste. You may also want to add a pinch of cayenne pepper or red pepper flakes for a little bit of heat.

Conclusion:

Butter and cheese noodles are a simple but delicious dish that can be made with just a few ingredients. With a little bit of practice, you can easily make this dish at home. Serve it as a main course or a side dish, and enjoy!
