BUSY DAY CHICKEN RICE CASSEROLE
This is my family's favorite one dish meal - mine too, since it is so easy to put together! I use skinless, boneless chicken breasts but mixed chicken pieces can be used, too. I also use the low fat, low sodium canned soups and the taste is still great!

Tips:
- Use day-old rice. This will help the rice stay firm and prevent it from becoming mushy in the casserole.
- Don't overcook the chicken. Overcooked chicken will be dry and tough. Cook it until it is just cooked through, or until it reaches an internal temperature of 165 degrees Fahrenheit.
- Use a variety of vegetables. This will add color, flavor, and nutrients to the casserole. Some good options include carrots, celery, onions, broccoli, and peas.
- Season the casserole well. Use a combination of salt, pepper, garlic powder, and onion powder to taste.
- Top the casserole with cheese. This will give it a golden brown crust and make it even more delicious.
- Let the casserole rest before serving. This will allow the flavors to meld together and the casserole to set.
Conclusion:
This chicken and rice casserole is a quick and easy weeknight meal that the whole family will love. It is made with simple ingredients that you probably already have on hand. Plus, it is a great way to use up leftover chicken and rice. This casserole is also a great option for meal prep.
