BUSY DAY CHICKEN RICE CASSEROLE
This is my family's favorite one dish meal - mine too, since it is so easy to put together! I use skinless, boneless chicken breasts but mixed chicken pieces can be used, too. I also use the low fat, low sodium canned soups and the taste is still great!

BUSY-DAY CHICKEN FAJITAS
When I don't have much time to cook supper, slow-cooker chicken fajitas are a flavorful way to keep my family full and satisfied. If you aren't cooking for young tastes, try spicing things up with medium or hot picante sauce. -Michele Furry, Plains, Montana

BUSY DAY CHICKEN
Easiest recipe I've ever fixed! I received it when my oldest son was a baby --today he is 17 and it is still a hit! Just a few minutes of preparation, and all day cooking. Dinner will be hot and ready whenever you have a chance to eat. Meat falls from the bones, and sauce can be used as a gravy for rice or potatoes. Enjoy!

Tips:
- Mise en Place: Before you start cooking, ensure all your ingredients and equipment are ready. This will help you save time and avoid scrambling during the cooking process.
- Use Quality Ingredients: The quality of your ingredients greatly impacts the final dish. Opt for fresh, high-quality ingredients whenever possible.
- Don't Overcrowd the Pan: When cooking chicken or vegetables, avoid overcrowding the pan. This will prevent them from cooking evenly and may result in soggy or undercooked food.
- Season Generously: Don't be afraid to season your chicken and vegetables generously. This will enhance their flavor and make them more enjoyable.
- Cook Chicken Thoroughly: It is essential to cook chicken thoroughly to ensure it is safe to eat. Use a meat thermometer to check that the internal temperature of the chicken has reached 165°F (74°C).
- Let the Meat Rest: Before slicing and serving the chicken, let it rest for a few minutes. This allows the juices to redistribute, resulting in more tender and flavorful meat.
