BROILED COCONUT TOPPING
My husband does not like the gooey icing of German Chocolate cake, so I found this pretty slick alternative! It has all the flavors, but a very distinct "crunch", it almost caramelizes on top of the cake. Try it, I think you will be pleasantly surprised! I do not use the nuts as my husband does not like nuts in his cakes, only cookies! This is perfect for a 13x9 cake, I often use a Swiss Chocolate cake mix.

- 4. BROILED COCONUT TOPPING:Beat 1/4 cup packed brown sugar and 2 tablespoons softened butter or margarine till combined.Stir in 1 tablespoon milk.Stir in 1/2 cup flaked coconut and,if desired, 1/4 cup chopped nuts.
Tips:
- Use the right size baking dish: A 9x13 inch pan is ideal for this recipe, as it will allow the cake to bake evenly and prevent it from becoming too thick or thin.
- Don't overmix the batter: Overmixing can make the cake tough, so be sure to mix just until the ingredients are combined.
- Broil the coconut topping carefully: Keep a close eye on the coconut topping while it is broiling, as it can burn easily. Broil for just a few minutes, or until the coconut is golden brown.
- Let the cake cool completely before serving: This will allow the cake to set and the flavors to develop.
Conclusion:
The Busy Day Cake with Broiled Coconut Topping is a classic Southern dessert that is perfect for any occasion. It is easy to make and can be tailored to your liking. For a richer cake, use butter instead of margarine. If you like a sweeter cake, add an extra cup of sugar to the batter. And if you want a more coconutty flavor, use shredded coconut in the batter and the topping. No matter how you make it, this cake is sure to be a hit.
