Provided by Giada De Laurentiis

Time 45m

Yield 6 servings

Number Of Ingredients 15

1 red onion, sliced into 1/3-inch rounds
1 teaspoon olive oil
1/4 teaspoon kosher salt
1 tablespoon balsamic vinegar
1/2 teaspoon sugar
2 ripe avocados, pitted and diced
1 tablespoon lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon red pepper flakes
2 pounds ground chuck (80/20 meat to fat)
1 1/2 teaspoons kosher salt
6 thin slices provolone piccante
2 cups arugula
6 potato hamburger buns, toasted
2 tomatoes, sliced thin, optional

Steps:

  • For the onions: Preheat a grill pan over medium-high heat.
  • Drizzle the onion slices with the olive oil and sprinkle with the salt. Place in the hot grill pan and cook, 2 to 3 minutes per side. Remove to a bowl and toss with the balsamic and sugar. Cover the bowl with a piece of plastic wrap and let steam at room temperature for about 10 minutes.
  • For the avocado: Mash together the avocado, lemon juice, salt and pepper flakes in a medium bowl.
  • For the burgers: Heat the grill pan over medium-high heat. Form the beef into 6 even patties (about 1/3 pound each). Sprinkle the patties evenly on both sides with salt and place in the grill pan. Grill until nicely browned, about 2 minutes on the first side. Flip the burgers and cook for an additional 2 minutes. Place a slice of cheese on top of each burger and cover with a bowl or lid to allow the cheese to melt. Cook to desired doneness, about 1 minute longer for medium.
  • Place a small amount of arugula on the bottom half of each toasted bun. Top with the patties, tomatoes, if using, and the grilled balsamic onions. Spread some of the avocado on the top half of the buns and close the burgers.

BUSY DAY BARBEQUE BRISKET

Busy Day Barbeque Brisket image

Brisket is rubbed with spices and liquid smoke and then cooked in a slow cooker with barbeque sauce until tender and juicy. This calls for just enough barbecue sauce for that smoky flavor while still allowing the flavor of the meat to come through. Hint: It's even better if you marinate it in the dry rub overnight.

BUSY DAY HOTDISH

Time 1h25m

Yield 6 servings

Number Of Ingredients 16

4 tablespoons unsalted butter, plus more for the baking dish
2 pounds ground beef (93 percent lean)
Kosher salt and freshly ground black pepper
1 large red bell pepper, chopped
1 bunch scallions (about 6), chopped
2 teaspoons paprika
1 cup frozen corn, thawed
1/3 cup all-purpose flour
2 1/2 cups low-sodium chicken broth
1/2 cup heavy cream
2 tablespoons chopped fresh Italian parsley
1 tablespoon Dijon mustard
2 teaspoons chopped fresh dill
2 teaspoons chopped fresh thyme
One 1-pound bag frozen seasoned curly fries
2 cups shredded Swiss cheese

Steps:

  • Preheat the oven to 400 degrees F. Butter a 9-by-13-inch glass or ceramic baking dish.
  • Heat a medium Dutch oven over medium heat. Add the butter, and once it melts, add the beef and sprinkle with 1 teaspoon salt. Cook, crumbling with a wooden spoon, until browned, 4 to 5 minutes. Add the bell pepper and scallions (saving a handful of the greens for garnish) and cook until the vegetables begin to wilt, 2 to 3 minutes. Add the paprika and several grinds of pepper, then stir to coat the beef in the spices. Stir in the corn.
  • Sprinkle the flour over the beef and stir to incorporate. Cook and stir until the flour begins to toast, about 2 minutes. Add the broth and cream gradually while stirring. Bring to a simmer and cook until the sauce thickens, 3 to 4 minutes. Stir in the parsley, mustard, dill and thyme. Pour the mixture into the prepared baking dish. Arrange the curly fries in a tight layer over the top. Sprinkle with the cheese. Bake until the cheese and fries are crispy and the sauce is bubbly, about 40 minutes. Sprinkle with the reserved scallion greens and serve hot.

Tips:

  • Choose the right ground beef: For the best burgers, use a blend of 80% lean ground beef and 20% fat. This will give you a juicy and flavorful burger.
  • Season the ground beef well: Don't be shy with the seasonings! Salt, pepper, garlic powder, onion powder, and paprika are all great options.
  • Don't overmix the ground beef: Overmixing the ground beef will make the burgers tough. Just mix it enough to combine the ingredients.
  • Form the burgers gently: Don't pack the ground beef too tightly when forming the burgers. This will also make them tough.
  • Cook the burgers over medium heat: This will help to prevent the burgers from drying out.
  • Don't flip the burgers too often: Flipping the burgers too often will make them dry. Flip them only once, when the burgers are cooked about halfway through.
  • Let the burgers rest before serving: This will help to keep the juices in the burgers.

Conclusion:

Busy Day Burgers are a quick and easy meal that can be enjoyed by the whole family. With a few simple ingredients, you can create a delicious burger that will be sure to satisfy everyone. So next time you're short on time, don't reach for the takeout menu. Instead, make a batch of Busy Day Burgers and enjoy a delicious and satisfying meal that you can feel good about.
