2 medium tomatoes, chopped
1 cup chopped green pepper

1 garlic clove, minced
1 cup Italian salad dressing
1/4 cup sour cream
1/4 cup minced fresh parsley

I've served it cold and hot; I think it's good both ways but my husband did not like it as much hot. It's a very healthy dish and a great way to get your veggies in for the day. It's one of the recipes that I actually like black eyed peas in.

4 tablespoons red wine vinegar
2 tablespoons extra virgin olive oil
1/4 teaspoon sea salt
1/4 teaspoon pepper
4 cups black-eyed peas (drained & rinsed)
3/4 cup celery, diced
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced
1/2 cup Spanish onion, diced
1/2 cup radish, diced
1/2 cup tomatoes, diced
