No beans about it: Nothing but beef, cheese, garlic and sauce is stuffed inside these baked burritos. My family is very picky, so I came up with these to satisfy everyone-and it worked! -Donna Holter, Centennial, Colorado

1 pound lean ground beef (90% lean)
1 cup marinara sauce
1/2 cup shredded part-skim mozzarella cheese
1/4 cup grated Parmesan cheese
1/4 teaspoon garlic powder
8 whole wheat tortillas (8 inches)

Steps:

  • Preheat oven to 375°. In a large skillet, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Stir in marinara sauce, cheeses and garlic powder., Spoon 1/3 cup filling in the center of each tortilla. Fold bottom and sides of tortilla over filling and roll up. Place on a baking sheet coated with cooking spray. Bake 18-20 minutes or until bottoms are light brown.

Just a little twist on the burrito. This one has a zesty Italian filling. I adapted this recipe from one found in our local paper.

Number Of Ingredients 12

2 lb lean ground beef
2 medium onions, finely chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 can(s) kidney beans, drained
1 jar(s) (26 to 28 ounces) ragu spaghetti sauce
1/2 tsp oregano
1/4 tsp dried red pepper flakes
salt and pepper to taste
10 (10 inch) flour tortillas
3 c shredded mozzarella cheese
sour cream

Steps:

  • 1. Brown beef in a large skillet. Stir in onions and bell pepper and cook for 5-7 minutes more until veggies are tender. Drain grease. Reserve about 1/4 cup spaghetti sauce for garnish. Stir in kidney beans, remaining spaghetti sauce, oregano, pepper flakes, and salt and pepper to taste. Heat through.
  • 2. To serve: Warm tortillas. In center of each tortilla place 1/3 cup cheese and 1 cup of meat filling. Roll up and place on plate seam side down. If desired garnish with a tablespoon of sour cream and a little spaghetti sauce on each burrito.
