This is my version of a local tea room/ice cream shop that serves the best chicken salad I've ever had. What makes it so good is the contrast of sweet fruit, the crunchiness of the nuts and a hint of tangy lemon.

2 cups cooked cubed chicken
2/3 cup celery, diced small
1 medium Red Delicious apple, diced small
1/4 cup purple onion, chopped fine
1/2 cup pecans, chopped
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon black pepper
2/3 cup mayonnaise (more if needed)
1 tablespoon lemon juice, freshly squeezed
1 tablespoon parsley
paprika, for garnishing

Steps:

  • In a medicum size bowl, combine the celery, apple, onion, pecans, salt, pepper, sugar, lemon juice and mayonnaise.

This salad with its sweet, pink tinted poppy-seed dressing was a favorite with clients at the 1929 Art Deco Wilshire Store Tea Room. The store closed in the '90's and is now the home of the Southwest Law School. It's art deco decor has been preserved and the building is now on the National Register of Historic Places. This had been the most famous and expensive of the Bullocks stores, and had a clientel that included the rich and famous. The recipe had been published in the Los Angeles Times food section when the tea room was closed.

2 cups crabmeat, in chunks
2 cups celery, thinly sliced
1/4 cup parsley, chopped
1/4 cup mayonnaise

shredded lettuce (to line plates)

1/4 cup vinegar, white
1/4 teaspoon dry mustard
