HOW TO COOK BULGUR WHEAT

How to Cook Bulgur Wheat image

Your ultimate guide for how to cook bulgur wheat perfectly every time! Bulgur is one of my favorite super grains used often in Mediterranean cooking. This nutritious, versatile grain is delicious in tabouli, kibbeh, in soups or stews, or alongside your favorite protein! I've included instructions for preparing both coarse and fine bulgur wheat.

Provided by Suzy Karadsheh

Categories     Side Dish

Number Of Ingredients 8

1 cup bulgur wheat, (medium-coarse or coarse)
1 ½ cups broth or water
1 tablespoon olive oil, (optional)
Kosher salt
Parsley for garnish
1 cup fine bulgur wheat
2 cups hot water or liquid
Kosher salt

Steps:

  • Rinse 1 cup of bulgur and drain well.
  • In a medium saucepan, bring 1 1/2 cups of low-sodium broth (or water) to a boil. Stir in the drained bulgur and olive oil (if using). Season with a big dash of kosher salt.
  • Allow the liquid to bubble again, then turn the heat down. Cover and let simmer for about 12 minutes or until the bulgur is tender and has fully absorbed the liquid.
  • Remove from the heat and let stand, covered, for another 10 minutes (leave it alone).
  • Fluff with a fork and garnish with parsley before serving.
  • Place 1 cup of dry fine bulgur grains in a large bowl. Pour 2 cups of hot water on top.
  • Set it aside for 10 to 12 minutes to soak. Once the bulgur has soaked all the water, you can fluff it and serve it or use it in tabouli or otherwise.

BULGUR WITH SWISS CHARD, CHICKPEAS AND FETA

Bulgur With Swiss Chard, Chickpeas and Feta image

Bulgur comes in one of four grades: fine (bags are often labeled #1), medium (#2), coarse (#3) and very coarse (#4). The different grinds are used for specific types of dishes. Pilafs are made with medium, coarse or very coarse bulgur. Tabbouleh and kibbe are made with fine bulgur. This is a convenient grain to keep on hand in the pantry. It's easy to find in whole foods stores and in Middle Eastern markets. Don't confuse it with cracked wheat, which is another product made from raw wheat berries. Because bulgur is made from precooked wheat berries, it takes only about 20 minutes to reconstitute by soaking or by simmering. It has a wonderful nutty flavor and a light texture.

Time 1h20m

Yield Serves four to six

Number Of Ingredients 9

1 cup bulgur (medium or coarse grade)
Salt to taste
1/4 cup extra virgin olive oil
1 pound Swiss chard, heavy stems removed, washed well
4 large garlic cloves, finely chopped
One 15-ounce can chickpeas, drained and rinsed or 1 1/2 cups cooked chickpeas
1/4 cup chopped fresh dill or parsley
Freshly ground black pepper to taste
3 ounces feta cheese, crumbed or cut in small squares

Steps:

  • Bring 2 cups water to a boil in a medium saucepan. Add the bulgur and salt to taste, reduce the heat, cover and simmer 20 minutes or until the water is absorbed. Remove from the heat and uncover. Place a clean dish towel over the pan, then replace the lid. Allow to sit undisturbed for 10 minutes.
  • Preheat the oven to 350 degrees. Oil a 2-quart baking dish. Toss the cooked bulgur with 1 tablespoon of olive oil and spread in the baking dish in an even layer.
  • Add water to a steamer pot, and bring to a boil. Place the Swiss chard in the steamer (you can use a pasta pot with an insert for this), and steam until it wilts, about four to five minutes. Drain, rinse with cold water and squeeze out the excess water with your hands. Chop coarsely and transfer to a bowl.
  • Heat another tablespoon of the olive oil in a small frying pan. Add the garlic. Cook, stirring, just until fragrant and translucent, 30 seconds to a minute, and scrape into the bowl with the chard. Add the remaining 2 tablespoons of olive oil, the chickpeas and dill. Season with salt and pepper, and toss together.
  • Lay the chard mixture over the bulgur. Top with the feta, and gently push the feta cheese down into this mixture. Bake 30 minutes or until sizzling. Serve hot.

This is the type of satisfying high-protein grain and legume dish that easily occupies the center of your dinner plate, accompanied by vegetables or a salad. Cook the chickpeas, then use the soaking water for reconstituting the bulgur. It couldn't be a simpler dish to make.

Provided by Martha Rose Shulman

Categories     dinner, lunch, main course, side dish

Time 1h35m

Yield Serves four to six

Number Of Ingredients 9

1 cup dried chickpeas, soaked in 1 quart water for six hours or overnight and drained
Salt to taste
1 cup coarse bulgur wheat
2 tablespoons extra virgin olive oil
1 bunch scallions, finely chopped
2 large garlic cloves, minced
1/4 cup finely chopped flat-leaf parsley, or a mixture of parsley and dill
2 tablespoons finely chopped fresh mint
Juice of 1 lemon

  • Heat 1 tablespoon of the oil over medium heat in a large, heavy skillet, and add the scallions. Cook, stirring, until tender, two or three minutes. Stir in the garlic, and continue to cook until fragrant, 30 seconds to a minute. Stir in the bulgur and chickpeas. Add the herbs and the remaining tablespoon of olive oil, and toss together. Remove from the heat, add lemon juice and pepper, taste and adjust salt. Add more lemon juice if desired. Serve hot or room temperature.

Yield Serves 6 as a first-course

Number Of Ingredients 11

5 tablespoons butter
1 large onion, chopped
3 garlic cloves, minced
1 1/2 cups bulgur
4 cups (about) chicken stock or canned low-salt chicken broth
1 pound asparagus, trimmed, cut into 3/4-inch pieces
1 1/2 cups frozen peas (unthawed)
3/4 cup freshly grated Parmesan cheese (about 1 1/2 ounces)
1/4 cup whipping cream
2 tablespoons chopped fresh tarragon
Additional freshly grated Parmesan cheese (optional)

Steps:

  • Melt 4 tablespoons butter in heavy large saucepan over medium heat. Add onion and garlic; sauté until light golden, about 5 minutes. Mix in bulgur. Add 1/2 cup stock and cook until absorbed, stirring often, about 5 minutes. Add 1/2 cup stock 2 more times, simmering after each addition and stirring often until liquid is absorbed. Mix in asparagus. Continue adding stock 1/2 cup at a time until bulgur is just tender and mixture is creamy, simmering after each addition and stirring often until stock is absorbed, about 20 minutes. Add peas and cook 3 minutes longer. Stir in 3/4 cup Parmesan, cream, tarragon and remaining 1 tablespoon butter. Serve, passing additional grated Parmesan, if desired.

Tips:

  • Choose the right bulgur: For this recipe, it's best to use fine or medium-grain bulgur, as they cook quickly and have a tender texture.
  • Rinse the bulgur before cooking: Rinsing the bulgur removes any impurities and helps prevent it from becoming sticky.
  • Use a flavorful broth: The broth you use to cook the bulgur will greatly impact the flavor of the dish. Use a flavorful broth, such as vegetable or chicken broth, for best results.
  • Add vegetables and herbs: Feel free to add your favorite vegetables and herbs to the bulgur. Some good options include carrots, celery, onions, garlic, parsley, and cilantro.
  • Season to taste: Once the bulgur is cooked, season it to taste with salt, pepper, and other spices as desired.

Conclusion:

Bulgur with peas is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's a good source of fiber, protein, and vitamins, and it's also a relatively quick and easy dish to make. With its mild flavor and fluffy texture, bulgur is a great base for a variety of dishes, from salads to pilafs to soups.
