4 teaspoons vegetable oil, divided, or as needed
12 shallots, peeled and left whole
1 pound cubed beef stew meat
1 tablespoon all-purpose flour
1 (12 fluid ounce) can or bottle Irish stout beer (such as Guinness®)
2 onion, cut in half and sliced
1 large garlic clove, crushed
4 slices smoked streaky bacon, sliced into strips
1 ½ cups fresh button mushrooms
salt and ground black pepper to taste

Steps:

  • Preheat slow cooker on Low.
  • Heat 2 teaspoons oil in a skillet over medium-low heat and cook shallots until they are lightly browned, 5 to 10 minutes. Place in the slow cooker. Add beef to the same skillet and cook until meat is seared on all sides and browned, about 5 minutes. Add flour and mix well. Pour in beer and bring to a boil. I had to take a crash course in "Know Your Beer 101" (thanks to Aaar friends in the Q & A section) before being able to post this recipe. This one came from another website, I just can't remember the name of it. It was posted on that site by Betty Copeland (her name is at the bottom of my print out). But the recipe is so simple to prepare and sounds delicious. I'll let you know because it's now the weekend, and there's no time like the present to try out a new recipe! Ok, I'm finally editing this recipe because I made it, and all I can say is YUMMY! Since I scorched my rice (I know, I know...first time I've ever done that..but yes, it happened) I served it over toast and it was so good! The only thing I did differently was to use a whole bottle of beer add approx 1 cup of water because I had a little over 3 lbs of steak.

1 (1 1/4 ounce) envelope onion soup mix
1 (7/8 ounce) envelope brown gravy mix

1 large onion, chopped
4 cloves garlic, minced
1 cup ketchup
½ cup beer
½ cup white vinegar
1 tablespoon Worcestershire sauce
4 drops liquid smoke flavoring
½ teaspoon salt
1 teaspoon ground black pepper
1 ½ teaspoons chili powder
1 teaspoon smoked paprika
1 teaspoon dried oregano
½ cup brown sugar
4 pounds beef brisket
2 teaspoons cornstarch
2 tablespoons water
16 potato buns, or as needed

Steps:

  • Place the onion and garlic into a large slow cooker. Pour in the ketchup, beer, vinegar, Worcestershire sauce, and liquid smoke; set aside. Combine the salt, pepper, chili powder, paprika, oregano, and brown sugar until evenly blended. Rub the spice mixture all over the beef brisket. Place the brisket into the slow cooker. Sprinkle the remaining spice mixture over top.
  • Cover, and cook on Low until the beef is easily shredded with two forks, 10 to 12 hours.
  • Remove the beef from the slow cooker, and place into a large bowl. Ladle the fat from the remaining sauce in the slow cooker and discard. Pour about 2 cups of the sauce from the slow cooker into a saucepan. Bring to a simmer over medium heat. Dissolve the cornstarch in the water, and stir into the simmering sauce. Cook and stir 5 to 10 minutes until the sauce has thickened. Meanwhile, shred the meat into small pieces using two forks.
  • Pour the thickened sauce and remaining sauce from the slow cooker into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the sauce right in the slow cooker.
  • Stir the shredded beef and pureed sauce together in the slow cooker. Use tongs to serve the beef on the potato buns.

1 Tbsp beef better than bouillon
1/2 tsp black pepper
1 tsp dry thyme leaves
3 Tbsp onion flakes, dehydrated
2 large bay leaves
4 lb beef pot roast (boneless)

Steps:

  • 1. Heat beer, bouillon, pepper, thyme, and onion flakes to a simmer. Can be done in the microwave.
  • 2. Place bay leaves in the bottom of a Crock Pot. Set roast on top. Pour heated beer mix over roast.
  • 3. Cook on high for 3-4 hours. Reduce to low for a few hours more. Alternately cook on low for up to 10 hours. Thicken gravy with a little cornstarch and water.

6 medium potatoes, peeled and quartered
2 medium onions, peeled and quartered

3 lbs boneless beef chuck roast
1/2 cup plain flour
2 -3 tablespoons butter, divided
2 onions, sliced
2 garlic cloves, crushed
