1 1/3 pounds ground sirloin
1 tablespoon Worcestershire
A handful chopped flat leaf parsley
1 shallot or boiling onion, minced
1/2 pound crumbled blue cheese
Extra-virgin olive oil, for drizzling
Steak seasoning, or, coarse salt and black pepper
4 crusty rolls, split
Romaine lettuce leaves
Vine ripe tomato slices
Blue cheese dressing (homemade or store bought)

Steps:

  • Combine first 4 ingredients and divide meat into 4 equal amounts. When forming each patty, nestle a pile of blue cheese crumbles into the center of the meat, and gently form patty around cheese.
  • Brush or drizzle burgers with extra-virgin olive oil and grill on indoor electric grill preheated to high for 7 to 8 minutes on each side. On an outdoor grill, cook 6 minutes on each side 6 inches from hot coals or over medium high gas flame with the grill lid closed. For preparation with no additional oil, broil 4 inches from broiler 7 minutes on each side.

1/4 cup skinny blue cheese dressing
1.25 lbs 93% lean ground turkey
2/3 cup grated carrots (grate in food processor)
1/4 cup seasoned whole wheat breadcrumbs
1 clove garlic (grated)
1 tbsp red onion (grated)
1/4 cup Franks Hot Sauce
salt and fresh pepper
oil spray
5 slices reduced fat cheddar
5 whole wheat burger buns (I used Martin's 100 calorie Potato Whole Wheat Buns)

Steps:

  • In a medium bowl combine broccoli slaw and skinny blue cheese dressing. Set aside.
  • In a large bowl, combine ground turkey, carrots, breadcrumbs, garlic, onion, hot sauce, salt and pepper. Makes 5 equal patties, 5.5 oz each.
  • Heat a large skillet on high heat. When hot, lightly spray the oil. Add burgers to the pan and reduce the heat to medium-low.
  • Cook on one side until browned 4-5 minutes, then flip.
  • Cook another 4 minutes or until burgers are cooked all the way through (keep heat medium-low to prevent burning); top with cheese and place on a toasted burger buns topped with broccoli slaw.
  • If grilling, clean grill well before cooking and spray with oil spray to prevent sticking.

1 1/3 pounds ground turkey breast, the average weight of 1 package
2 cloves garlic, finely chopped
1 large shallot or 1/4 red onion, finely chopped
2 tablespoons chopped fresh thyme leaves or 1 teaspoon dried thyme leaves
2 tablespoons chopped fresh cilantro leaves, optional - parsley may be substituted
1/2 small bell pepper, green, red or yellow, seeded and finely chopped
1 serrano or jalapeno pepper, seeded and finely chopped
2 teaspoons, 2/3 palm full, ground cumin
1 to 2 teaspoons cayenne hot sauce, several drops (recommended: Tabasco)
2 teaspoons grill seasoning blend (recommended: Montreal Steak Seasoning by McCormick)
Vegetable oil or olive oil, for drizzling
1/2 pound deli sliced pepper jack cheese
4 crusty kaiser rolls, split

1 lb lean ground turkey
1/2 cup dry breadcrumbs
1 egg
3 tablespoons hot sauce (a buffalo-style sauce like Frank's RedHot)
1 teaspoon salt
1/4 teaspoon black pepper
3 ounces blue cheese, crumbled
2 tablespoons butter (if frying)
4 hamburger buns, sliced

Steps:

  • Combine meat with breadcrumbs, egg, hot sauce, salt & pepper. Mix well, and form into eight patties of the same size.
  • Divide the blue cheese into four equal portions. Place a portion of the cheese atop one patty, then top with another patty. Fold the patty's edges together so the cheese is hidden in the center. Seal well so nothing leaks out when cooking. Repeat three more times to make four burgers in total.
  • Heat the butter in a skillet of medium-high heat. Cook patties, flipping once, for about 15 minutes.
