Time 1h30m

Yield about 4 appetizer servings.

Number Of Ingredients 17

2 cups all-purpose flour
1/2 teaspoon cayenne
1/2 teaspoon fine salt
Vegetable oil, for frying
2 pounds chicken wings, split at the joint, wingtips removed and discarded
1/2 cup unsalted butter, melted
1/4 cup hot sauce, or to taste
2 tablespoons fresh lemon juice
1 cup mayonnaise
1/2 cup half-and-half
2 tablespoons sour cream
1 tablespoon fresh lemon juice
1/4 teaspoon Worcestershire sauce
1/2 cup crumbled blue cheese, such as Maytag (about 3 ounces)
Kosher salt and freshly ground black pepper
Celery sticks, for serving
Carrot sticks, for serving

Steps:

  • For the wings: Preheat the oven to 400 degrees F. Line 1 large or 2 small rimmed baking sheets with foil.
  • Whisk together the flour, cayenne and salt in a large bowl.
  • Heat 2 inches of oil in a large, heavy-bottomed pot over medium heat until a deep-fry thermometer registers 375 degrees F. Working in 3 batches, dredge the wings in the flour mixture and fry until lightly browned, 10 to 12 minutes per batch. Transfer the wings with a slotted spoon to a paper-towel-lined plate. (Make sure the oil returns to the proper temperature before frying each batch.)
  • Combine the butter, hot sauce and lemon juice in a large bowl. Toss the fried wings in the hot sauce mixture; transfer the wings and sauce to the prepared baking sheet(s). Bake, flipping the wings occasionally, until they are crispy and have absorbed most of the sauce, about 35 minutes.
  • For the blue cheese dressing: Whisk together the mayonnaise, half-and-half, sour cream, lemon juice, salt, Worcestershire and 1/4 cup of the blue cheese in a medium bowl until smooth. Gently stir in the remaining 1/4 cup blue cheese and season with pepper to taste. Use immediately, or refrigerate for up to 3 days. (Makes about 2 1/2 cups dressing.)
  • Transfer the wings to a serving platter and serve with the blue cheese dressing and celery and carrot sticks.

If you are a lover spicy food and buffalo wings then you might want to give this recipe a try, you may of coarse double or triple this recipe but because of the spices and cayenne you will need to make each recipe in a separate bowl (10 wings in each bowl) the amount of cayenne may be adjusted to suit heat level, plan ahead the coated wings *must* be refrigerated 2 hours before frying, this is important so do not skip ;-) Serve the wings with a blue cheese dip see recipe#181552 or use your own favorite recipe

Time 2h15m

Yield 10 wings

Number Of Ingredients 13

1/4 cup butter
1/4 cup Frank's red hot sauce (original flavor, or use your own favorite brand hot sauce)
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1 pinch salt (or to taste)
1/2 cup all-purpose flour
1/4 teaspoon paprika
1/4-1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon seasoning salt

BUFFALO-STYLE CHICKEN WINGS

Buffalo-Style Chicken Wings image

This is a recipe I learned from a very good friend, and every time I make it there isn't a wing left over. Always a 5-star with friends and family. You can tweak the recipe how you like. Less butter gives you a thicker sauce. I prefer a thinner sauce.

Categories     Appetizers and Snacks     Spicy

Time 25m

Yield 6

Number Of Ingredients 6

1 gallon oil for frying, or as needed
3 pounds chicken wings and drummettes
½ cup unsalted butter
1 (12 fluid ounce) can or bottle hot pepper sauce (such as Frank's RedHot®)
1 (1 ounce) package dry ranch salad dressing mix (such as Hidden Valley Ranch®)
1 tablespoon white vinegar

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Fry chicken wings in small batches in hot oil until no longer pink at the bone and the juices run clear, about 15 minutes per batch. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C). Assure oil reaches 375 degrees F (190 degrees C) between batches.
  • Melt butter in a saucepan over low heat. Stir hot sauce, ranch dressing mix, and vinegar into the melted butter.
  • Put cooked chicken wings in a large mixing bowl. Ladle sauce over wings and toss to coat.

JERSEY-STYLE BUFFALO CHICKEN WINGS

JERSEY-STYLE BUFFALO CHICKEN WINGS image

Categories     Chicken     Appetizer     Fry     Super Bowl     Tailgating

Yield 2 people

Number Of Ingredients 9

1 pound Chicken wings, disjointed, use drums and wingettes, save tips for stock or discard
1/2 Cup of flour
2 teaspoons seasoned salt
1 teaspoon paprika
Cayenne pepper - none for mild, 1/4 teaspoon for medium, & more for hot as you want
Oil for frying
1/4 Cup of Frank's Original Hot Sauce, Crystal or Louisiana will also work, just not as well (Frank's is thicker and coats better)
3 tablespoons butter (or margarine if you must!)
2 teaspoons brown sugar

Steps:

  • Combine flour, seasoned salt, paprika and cayenne. Shake wing pieces in flour until well coated. For deep-frying: Heat oil to 350 Fahrenheit (or just heat if there are not temperature controls) Add wings to oil, but just enough so there is room, and stir them for a few moments so they don't stick together. Fry until done, they float when fully cooked. Drain on paper towels and keep warm. For pan-frying: Heat about 1 inch of oil over medium high heat. Add enough wings to fill pan without being crowded. Partially cover the pan (leave at least 1/2 inch opening to vent steam) and lower the heat to medium low. Cook and turn for about 15-20 minutes. You want the wings to brown but not burn, so keep a close eye on them. Drain on paper towels as they are done. For Sauce: Heat the hot sauce in a saucepan over medium-high heat. Add the butter and brown sugar. Mix and swirl the pan to incorporate the butter and sugar until you have a smooth sauce. Assembly: Put the wings in a large bowl and toss with the finished sauce. Serve immediately with bleu cheese dressing and any other accompaniments desired.

CRISPY RESTAURANT STYLE BUFFALO CHICKEN WINGS

Crispy Restaurant Style Buffalo Chicken Wings image

Regardless of how you dress your wings, the key to making amazing wings is to fry them twice. I love them tossed in the dry seasoning rub listed below, since they maintain their crunchy flavor! I never understood those who chose to oven-bake their wings; it's called a guilty pleasure for a reason! You can also season the wings with an Asian soy, BBQ, herb or traditional buffalo-style hot sauce. Serve immediately along side celery and ranch or blue cheese dressing, if desired!
