4 cups cauliflower florets (~1 medium head)
1 cup superfine almond meal
1 tablespoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon pepper
2 large eggs
1/2 cup Franks Hot Sauce
2 tablespoons maple syrup
3/4 cup nonfat Greek yogurt
1/3 - 1/2 cup blue cheese crumbles
1 tablespoon lemon juice
1/8 teaspoon salt

Steps:

  • Preheat oven to 400ºF and spray a baking sheet with olive oil cooking spray.
  • Prep cauliflower, but cutting into "wing-sized" pieces. Set aside.
  • Make rub my mixing together almond flour, garlic powder, smoked paprika, salt, and pepper. Transfer into a gallon-sized bag.
  • Then, crack 2 eggs in a bowl and whisk.
  • Dip cauliflower into the egg mixture and thoroughly coat. Then transfer into gallon-sized bag. Repeat with all pieces of cauliflower.
  • Shake bag so that the cauliflower gets coated with rub.
  • Transfer cauliflower onto baking sheet and spread out evenly. Spray cauliflower with olive oil cooking spray or alternatively drizzle on some olive oil.
  • Bake at 400ºF for 20 minutes. Remove and flip cauliflower. Bake for 10 more minutes.
  • While cauliflower is baking, prepare buffalo sauce. Mix together Franks and maple syrup.
  • When cauliflower is done baking, toss in buffalo sauce, making sure all pieces are coated.
  • Place cauliflower back on baking sheet and then bake at 400ºF for 3-5 more minutes.
  • Remove from oven and let sit for 5 minutes.
  • Prepare blue cheese sauce, by mixing together all ingredients.
  • Enjoy!

1 tbsp sweet smoked paprika
1⁄2 tbsp ground cumin
1 tsp garlic powder
100g plain flour
200ml buttermilk or kefir
1 head of cauliflower (500g), broken into florets
80g hot sauce
1½ tbsp maple syrup
1 tbsp butter
celery sticks, to serve
100g Greek yogurt
3 tbsp mayonnaise
2 tbsp chopped chives
1-2 tbsp milk

Steps:

  • Heat the oven to 220C/200C fan/gas 7 and line a baking tray with baking parchment. Mix together the paprika, cumin, garlic powder, flour and ½ tsp salt in a large bowl. Make a well in the centre and whisk in the buttermilk. Tip in the cauliflower and toss to coat. Spread out the cauliflower on the baking tray and cook for 20-25 mins, turning halfway through, until crisp at the edges.
  • Warm the hot sauce, maple syrup and butter in a small pan set over low heat, for 2-3 mins. Liberally brush over the cauliflower and put back in the oven for 8-10 mins.
  • For the ranch dip, whisk together the yogurt, mayo, chives, milk and a pinch of salt in a bowl. Serve the with the cauliflower alongside some celery sticks for dipping.

1 tablespoon dried thyme
1 head cauliflower, cut into wing-sized pieces
3 tablespoons ground flax meal
1/2 cup hot water
1 1/2 cups gluten-free flour blend (or regular flour if you prefer)
1 teaspoon granulated garlic
1 teaspoon dried oregano
1 teaspoon ground black pepper
1 teaspoon salt
1 teaspoon dried thyme
1 cup oat milk
Oil, preferably canola, for frying
Hot sauce, ranch dressing, carrots and celery, for serving

Steps:

  • For the cauliflower: Fill a large pot with water. Add the bay leaves, granulated garlic, oregano and thyme to the water and bring to a boil. Add the cauliflower pieces and boil until tender but not mushy, about 10 minutes. Drain the cauliflower and set aside.
  • Meanwhile, make the batter: Add the flax meal to the hot water in a small bowl and let sit for about 5 minutes.
  • In a separate bowl, mix the flour, granulated garlic, oregano, pepper, salt and thyme. Add the oat milk and flax meal mix and whisk until well combined.

  • Heat a pan for frying over medium-high heat and fill with about an inch of frying oil. Bring to 350 to 375 degrees F.
