Time 13h

Yield 2 servings

Number Of Ingredients 13

1 pound Greek yogurt
1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoons ground cumin
2 teaspoons garlic salt
2 teaspoons smoked paprika
1 teaspoon freshly ground black pepper
1 teaspoon kosher salt
24 medium chicken drumsticks
Neutral oil, for deep-frying
Hot sauce, such as Frank's, as needed
Melted unsalted butter, as needed
Blue cheese dressing, for serving

Steps:

  • Combine the yogurt, garlic powder, onion powder, cumin, garlic salt, smoked paprika, black pepper and kosher salt in a large bowl and mix thoroughly. Add the drumsticks and turn to coat. Marinate overnight (at least 12 hours) in the fridge.
  • Preheat the oven to 350 degrees F.
  • Remove the chicken from the marinade, place on a baking sheet and bake for 20 minutes. Remove from the oven and let cool.
  • Heat the oil in a deep fryer to 375 degrees F.
  • When ready to serve, fry the drumsticks until the skin is crispy, 3 to 5 minutes. Toss them with hot sauce and butter in a large bowl (use more butter than hot sauce for a mild heat and more hot sauce than butter for a spicier flavor). Serve with blue cheese dressing.

Why should chicken wings have all the fun? ;-) personally, I don't like margarine, but if you want that really "authentic" buffalo flavor (which I always found a bit junky), replace the butter with margarine.

Tips:

  • Choose the right chicken drumsticks: Look for drumsticks that are about the same size so they cook evenly. You can also use chicken thighs if you prefer.
  • Marinate the chicken: Marinating the chicken in a mixture of buttermilk, hot sauce, and spices helps to tenderize the chicken and gives it a delicious flavor.
  • Use a good quality hot sauce: The hot sauce is the key ingredient in this recipe, so make sure you use a good quality hot sauce that you enjoy. If you like things really spicy, you can add more hot sauce to the marinade or the coating.
  • Coat the chicken evenly: Make sure the chicken is evenly coated in the flour mixture before frying. This will help to ensure that the chicken is crispy and cooked through.
  • Fry the chicken in hot oil: The oil should be hot enough to fry the chicken without burning it. If the oil is not hot enough, the chicken will not cook through and will be greasy. If the oil is too hot, the chicken will burn.
  • Drain the chicken on paper towels: After frying, drain the chicken on paper towels to remove any excess oil.
  • Serve hot: Buffalo drumsticks are best served hot, with your favorite dipping sauce.
