1 1/4 cups panko breadcrumbs
1 1/4 pounds large carrots, peeled and cut into 2-inch pieces
2 tablespoons extra-virgin olive oil
1/4 cup mayonnaise
2 cups sliced celery stalks, plus 1/4 cup leaves
2 ounces mild blue cheese, crumbled (1/2 cup)
2 teaspoons red-wine vinegar

1/4 pound blue cheese
Kosher salt
Freshly ground black pepper
2 tablespoons olive oil
1 stick unsalted butter
2 tablespoons hot sauce (recommended: Frank's Hot Sauce)
2 tablespoons white vinegar
Celery, sliced thin, to serve

Steps:

  • Heat the oven to 350 degrees F.
  • Using a sharp knife, cut a pocket into each chicken breast. Stuff 1/4 of the blue cheese into each breast. Secure the openings with toothpicks and season with salt and pepper. Heat the oil in a nonstick, oven-proof skillet over medium heat and sear the chicken on both sides until browned, about 3 to 4 minutes per side. franks red hot buffalo wing sauce (12oz)
16 ounces cream cheese
1/2 cup sharp cheddar cheese, shredded
1 ranch dressing mix, packet or 1 approx 1/4 cup premade ranch dressing
bleu cheese salad dressing (to taste)

Steps:

  • Place 4 chicken breast fillets in the bottom of the crockpot.
  • Pour Franks sauce over chicken. I usually do just enough to cover chicken at this time.
  • Cook on low for approx 5-6 hours (or high for 4).
  • Shred the chicken with 2 forks. If cooking on high, switch to low after 4 hours.
  • Now (or approx 1 hour before you plan to serve) add the cream cheese. Stir it in with a fork and help break it apart as it melts in to the chicken.
