1/2 cup (1 stick) unsalted butter, cut into small pieces
1 tablespoon crumbled blue cheese or more to taste

Steps:

  • Arrange a rack in the middle of the oven and preheat to 375°F.

1 head cauliflower, chopped into bite-size pieces
1 -2 tablespoon olive oil
kosher salt, to taste
2 tablespoons unsalted butter
2 garlic cloves, chopped
1/4 cup hot sauce (Frank's Red Hot is a good choice)
1 cup plain yogurt
1/2 cup blue cheese, crumbled
2 teaspoons garlic powder
1 teaspoon salt (to taste)
1/8 teaspoon black pepper

Steps:

  • Preheat the oven to 450°F.
  • In a bowl, combine the cauliflower with just enough olive oil to lightly coat the cauliflower and toss. Sprinkle with kosher salt.
  • Spread the cauliflower on a baking sheet and bake for 30 to 35 minutes or until browned, turning once.
  • While the cauliflower roasts, make the buffalo sauce: Melt butter in a small saucepan. Add garlic. Stir together butter and garlic with hot sauce; remove from heat and set aside.

3 tablespoons mayonnaise
1 large egg
6 cups cauliflower florets

1 pinch ground black pepper

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Spray a baking sheet with cooking spray.

2 tablespoons grapeseed oil, plus more for frying
1/2 teaspoon cayenne pepper

3/4 cup arrowroot or cornstarch
1 cauliflower head, cut into florets
4 stalks celery, cut into thin sticks
Ranch Dressing, for serving, recipe follows
1/2 cup vegan mayonnaise
1/2 cup almond milk
3 tablespoons finely chopped flat-leaf parsley
2 tablespoons finely chopped chives
4 teaspoons fresh lemon juice
1 medium clove garlic, finely chopped
1/2 teaspoon kosher salt, plus more if desired
1/8 teaspoon freshly ground black pepper, plus more if desired

Steps:

  • Preheat the oven to 300 degrees F.
  • Whisk together the hot sauce, 2 tablespoons grapeseed oil, the cayenne and 1/4 teaspoon salt in a small saucepan. Heat over low heat until ready to coat the cauliflower.

1/2 small yellow onion, diced
2 small head cauliflower or 4 stalks cauliflower
1 cup almond flour
2 large eggs, separated
1/2 cup buffalo wing hot sauce, plus 1 teaspoon
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 cups crispy rice cereal, blended in food processor
1/3 cup ranch dressing or 1/3 cup blue cheese dressing, for dipping

Steps:

  • Preheat oven to 450 degrees F. Line a baking sheet with parchment paper and grease with cooking spray. Set aside.
  • If using whole cauliflower, remove the outer leaves and core. Cut into large chunks and add half to a food processor. Plus until finely chopped, and becomes almost like a paste. Transfer to a bowl, and continue chopping the rest of the cauliflower in the same way. If using just the stalks of cauliflower you've saved, chop up the stalks and proceed as directed.
