SLOW COOKER WHITE CHICKEN CHILI
This tangy, mildly spicy white-bean chili is as warming and comforting as a traditional chili, but in a lighter, brighter form. Plenty of green chiles - fresh and canned - provide kick while creamy white beans mellow it all out. To decrease the heat level, remove and discard the seeds from the jalapeño before you mince it. A large handful of chopped cilantro added at the end brings freshness, but if you don't care for cilantro, pass it at the table along with the other toppings or omit it entirely. Continuing the spirit of customizing your chili, you can make this in the slow cooker or on the stovetop. Use 3 cups chicken stock in the slow cooker and 4 cups on the stovetop, where liquid is more likely to evaporate.

Steps:
- In a large Dutch oven, melt the butter over medium heat. Add the onion, season with salt and cook, stirring occasionally, until the onion is softened and translucent, about 8 minutes. Add the garlic and jalapeño and cook until fragrant, about 1 minute. Add the chopped green chiles, cumin, onion powder, oregano and cayenne and stir until fragrant, 1 to 2 minutes.
- Transfer the mixture into a 5- to 8-quart slow cooker. Generously season the chicken thighs with salt and add them to the pot. Stir in 3 cups chicken stock and the beans. Cover and cook on low until the chicken is tender, 4 to 6 hours.
- Shred the chicken using two forks. (You can do this directly in the pot, or remove the chicken to a bowl, shred it, then return it to the pot.) Stir in the frozen corn, cover and cook until warmed through, about 10 minutes. Stir in the cilantro, if using, and lime juice. Season to taste with salt. Serve in bowls and pass the toppings at the table.

CROCK POT CANDY (MR. BUD'S CANDY)
I saw this on Just A Pinch Recipe Club, putting here for safe-keeping. It sounds like it would be good for Christmas time or for fund-raising events. Here is a note that was in the directions: If your crockpot appliance is below 275 watts, you should not have any problem with the candy burning if you follow the ingredients and the directions, however, all crockpots are different, so please pay attention to your cooking process. Look on the bottom of your appliance to see the wattage. The other note was too long to include here, so it's at the bottom of the recipe.

Steps:
- Put ingredients into a 4 or 5-quart crockpot in EXACT order as listed. Cover and cook on LOWEST setting [on your appliance] for 3 hours.
- DO NOT remove lid!
- Turn off and allow to cool slightly. Mixture will not be melted but will be soft.
- Mix thoroughly and drop by teaspoon size cookie dropper or a teaspoon onto wax paper. Let cool thoroughly.
- NOTE: This candy is made best by following the recipe to the letter. Make other variations and changes at your own risk, [for example, using pecans or almonds in place of peanuts; white chocolate chips instead of almond bark, etc.] as this is the voice of experience speaking. Please take into consideration that it may alter the quality of the finished product.
- **NOTE: There seems to be discrepancies in the terms crockpot and slow cooker. This recipe is for a crockpot which, when on low, will only melt the ingredients. A slow cooker will get hotter and start to cook the ingredients, thus resulting in an inferior product. Please be aware of what kind of appliance you have. It seems the older "crockpot" works best. There have been some who have burned their ingredients because their appliance is too hot. The makers and manufacturers of these appliances seem to interchange the description of their appliances calling slow cookers crockpots. It seems that Rival owns the name crockpot, therefore, others can't use the name crockpot, they are slow cookers. It's very confusing, but slow cookers, indeed, cook hotter, which could result in burning of this recipe.

SLOW-COOKED WHITE CHILI
This version won our chili cookoff at work a few years ago in the non-traditional category. Once the weather turns cool, this is one of the first things we make! Also great for a group.

Tips:
- Use fresh, high-quality ingredients: The fresher your ingredients, the better your chili will taste. Look for ripe, flavorful vegetables and fresh, lean ground beef.
- Don't overcrowd the slow cooker: If you crowd the slow cooker, the food will not cook evenly. Leave at least 1 inch of space between the ingredients and the top of the slow cooker.
- Cook the chili on low for 6-8 hours: This will allow the flavors to meld and develop. If you cook the chili on high, it will be more likely to scorch.
- Season the chili to taste: Once the chili is cooked, taste it and adjust the seasonings as needed. You may want to add more chili powder, cumin, or salt and pepper.
- Serve the chili with your favorite toppings: Some popular chili toppings include sour cream, shredded cheese, chopped onion, and avocado.
