OLD FASHIONED BUCKWHEAT PANCAKES

Old Fashioned Buckwheat Pancakes image

This came from a recipe book that I received from my mother for graduation from High School many years ago. According to this book the pancake was brought to USA by the early Dutch settlers. Later the Germans in Pennsylvania would serve the pancakes for breakfast, lunch, or dinner.

BUCKWHEAT PANCAKES (YEAST METHOD)

Buckwheat Pancakes (Yeast Method) image

this is one of my adopted recipes. Based on the reviews, I have not made any changes. The original submitter said this was her mother's recipe for buckwheat pancakes. You have to start the night before, but the result is well worth it. You even have the possibility of using a starter like with sourdough. (Prep time does not include overnight period.)

Provided by GrandmaIsCooking

Categories     Breakfast

Time 35m

Yield 16 large pancakes, 4-6 serving(s)

Number Of Ingredients 8

2 2/3 cups all-purpose flour
1 1/3 cups buckwheat flour
1 teaspoon salt
1 (1/4 ounce) package dry yeast (2-3 tsp)
2 1/2 cups water (warm)
3 tablespoons brown sugar
3/4 teaspoon baking soda
2 tablespoons oil

Steps:

  • Combine flours and salt.
  • Soften yeast in warm water; stir in 1 tablespoon brown sugar.
  • Stir this liquid into the dry ingredients and mix well.
  • Be sure to use a large enough bowl so that your bowl is no more than half full at the beginning to allow plenty of room for rising.
  • Cover and let stand overnight at room temperature.
  • Next morning, stir batter, then add remaining sugar, the baking soda and oil and mix well.
  • If you want to try using a starter next time, reserve 1 cup of batter (it will keep for several weeks in the refrigerator).
  • Fry the remaining batter in a lightly greased frying pan or griddle (I prefer cast iron) as you would for regular pancakes, turning once.
  • To use starter:.
  • When you are ready to prepare the recipe again, place starter (all of it) in a large bowl (see warning, step 4 above).
  • Add 2 1/4 cups warm water, 2 1/4 cups flour, and 1 1/4 cups buckwheat flour and stir until smooth.
  • Cover; let stand overnight as before.
  • Next morning stir batter, then add 2 tablespoons brown sugar, 3/4 teaspoons soda and 2 tablespoons oil.
  • Repeat steps 7 and 8 above.

VEGAN, GLUTEN-FREE BUCKWHEAT PANCAKES

Vegan, Gluten-Free Buckwheat Pancakes image

This recipe is from the book Vegan Brunch by Isa Chandra Moskowitz. Feel free to sub all quinoa flour for the corn flour or vice-versa if you don't have both on hand. I have also used chickpea flour. Whatever you do, just don't use cornmeal; it's much coarser than corn flour.

Provided by Prose

Categories     Breakfast

Time 25m

Yield 8 pancakes, 4 serving(s)

Number Of Ingredients 13

1/2 cup buckwheat flour
1/4 cup quinoa flour
1/4 cup cornflour
2 tablespoons tapioca flour (or cornstarch or arrowroot)
1 tablespoon ground flax seeds (or flax meal)
1 tablespoon baking powder
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup soymilk (or other nondairy milk)
1/2 cup water
2 tablespoons pure maple syrup
2 tablespoons canola oil
1/2 teaspoon vanilla extract

Steps:

  • Mix dry ingredients in a large mixing bowl (flours, flax seeds, baking powder, cinnamon, and salt).
  • Create a well in the center and add the remaining (wet) ingredients. Use a fork to mix well for about a minute. Let the batter rest for about 10 minutes and preheat a large skillet over medium-high heat.
  • When pan is hot, spray with cooking spray and use an ice cream scooper to pour batter and form pancakes. The pancake will form little air bubbles, but not as much as "normal," so don't worry. Cook for 2 1/2-3 minutes, then flip and cook for 2 minutes more.

CHOCOLATE CHIP-BUCKWHEAT-BANANA PANCAKES

Chocolate Chip-Buckwheat-Banana Pancakes image

When it comes to breakfast, there are two kinds of moms: those who put chocolate chips in their kids' pancakes and those who don't. I'm a blueberries kind of mom. My sister is a chocolate chips kind of mom. Her chocolate chip pancakes have us whole heart and soul. My kids don't have any shortage of sweets; between parties and holidays and my baking addiction, they're far from deprived. But sometimes I want to be a chocolate chips at breakfast kind of mom. For those days, I have these pancakes. It would be unfair to call these pancakes either indulgent or healthy--they are a little bit of both. Most of all, these pancakes are a feeling my kids have when I've made them. They're about me being that kind of mom, if only once in a while.

Provided by Sarah Copeland

Categories     main-dish

Time 20m

Yield 2 to 4 servings (makes 6 small pancakes)

Number Of Ingredients 11

1 ripe banana
1 teaspoon pure vanilla extract
3/4 cup (180 milliliters) whole milk or almond milk
1/2 cup (70 grams) buckwheat flour
1/2 cup (50 grams) quick-cooking or plain rolled oats (not thick)
1 teaspoon baking powder
1 tablespoon sugar
1/2 teaspoon fine sea salt
Unsalted butter or coconut oil
Scant 1/2 cup (about 80 grams) bittersweet chocolate chips
Fresh fruit, honey, pure maple syrup, or powdered sugar, for serving

Steps:

  • Smash the banana with a fork into a smooth pulp (don't be tempted to add the other wet ingredients before this is done). Add the vanilla and milk and mash together. In a separate bowl, whisk together the buckwheat flour, oats, baking powder, sugar, and salt. Add the wet to the dry ingredients and stir gently, being careful not to overmix; you want to keep these pancakes light and airy. Too much stirring will make them gummy and dense.
  • Heat a cast-iron griddle or skillet over medium heat until evenly warm. Add a bit of butter to coat the surface. When the butter sizzles, drop a scant 1/4 cup (60 milliliters) of batter onto the skillet in batches, leaving 2 inches (5 centimeters) between the pancakes. (Don't make your pancakes big; they are tender because there's no egg to bind the batter.) Cook until just starting to bubble around the edges. Dot the pancakes with chocolate chips, then flip (they should release easily from the griddle).
  • Cook on the second side until just done, usually a minute or two (if the pancake stays on the heat too long, the chocolate will scorch), turning the heat to low if needed. Repeat until all the batter is used. Serve warm with butter and your favorite toppings.

DOUBLE-BUCKWHEAT BLUEBERRY PANCAKES

Double-Buckwheat Blueberry Pancakes image

I call these double-buckwheat pancakes because I use both buckwheat flour and cooked buckwheat (kasha) in the batter. Cooked whole grains always contribute moisture and great texture to pancakes, and kasha has such a wonderful nutty flavor as well. I use half buckwheat flour and half whole wheat flour in the batter; if you don't eat gluten you could substitute a gluten-free all-purpose flour for the whole wheat flour. The buckwheat is already gluten-free but an all-buckwheat flour batter would be difficult to work with, a bit too heavy and sticky. This batter is already dense and a bit sticky (that's the buckwheat flour), but the pancakes are not heavy.

Time 1h

Yield serving 4 to 6

Number Of Ingredients 13

3/4 cup / 100 grams buckwheat flour
3/4 cup / 100 grams whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
Scant 1/4 teaspoon fine sea salt
2 large or extra large eggs
1 1/2 cups / 355 ml buttermilk
1 tablespoon honey (can be a strong honey like buckwheat honey) or agave nectar
1 teaspoon vanilla extract
3 tablespoons grapeseed oil or melted butter
3/4 cup /113 grams cooked kasha
6 ounces / 1 1/3 cups (1 box) fresh or frozen blueberries
1/2 teaspoon all-purpose flour

Steps:

  • Preheat a griddle.
  • Sift together flours, baking powder, baking soda and salt.
  • In another bowl, whisk eggs, then add buttermilk and honey or agave nectar, and whisk together. Whisk in vanilla extract and oil or melted butter.
  • Add flour mixture to wet ingredients and quickly whisk together. Do not over-beat. A few lumps are okay. Stir in cooked kasha.
  • In a separate bowl toss blueberries with 1/2 teaspoon flour.
  • If necessary, brush hot griddle with butter. Drop by small ladlefuls (3 to 4 tablespoons) onto the hot griddle. Place 6 or 7 blueberries on each pancake. Cook until bubbles begin to break through, 2 to 3 minutes. Turn and cook for 30 seconds to a minute on the other side, or until nicely browned. Remove from heat and continue until all of the batter is used up. Serve hot, with butter and maple syrup.

BUCKWHEAT AND OAT PANCAKES

Buckwheat and Oat Pancakes image

I've been working on this recipe for a few months now and I'm happy with this final version. I've attempted to make it healthy without being austere. If you can't buy oat flour locally you can make it by processing rolled oats or just go ahead and use the rolled oats as is. Hope you enjoy it as much as we do. This is great for a cozy winter supper with grilled turkey sausage and a grilled seasonal vegetable.

LOW FAT BUCKWHEAT PANCAKES

Low Fat Buckwheat Pancakes image

This recipe has a bit of a convoluted history! It was originally posted by a poster who left, and then was put up for "adoption." Since I'd made it before and loved it, I took it on as my own! I did change a few things when I made it; I had some apples to use up, so I cored nd sliced them and when I poured the batter on the griddle, I arranged the apple slices decoratively on top. That way, when I flipped the pancake, the slices got cooked into the pancake. It was yummy and added even more fiber and vitamins! Anyway, here's the original poster's description: Healthy pancakes to get you going in the morning. They aren't very sweet, so add some sugar or honey if you like your pancakes sweet. I like to eat these topped with plain yogurt and a bit of syrup. Freezes well.

Cook, adding apple slices to each pancake as bubbles form, until edges have set and undersides are golden-brown, 2 to 3 minutes. Sprinkle with sugar, then flip and cook 2 minutes more. Transfer finished pancakes to oven to keep warm. Serve with Greek yogurt and maple syrup.

Tips:

  • Use fresh buckwheat flour. Fresh buckwheat flour has a nutty flavor and a slightly green color. It is important to use fresh flour because old flour can be rancid and have an off flavor.
  • Grind your own buckwheat flour. If you have a grain mill, you can grind your own buckwheat flour. This will give you the freshest and most flavorful flour possible.
  • Use buttermilk or yogurt in the batter. Buttermilk or yogurt will help to make the pancakes light and fluffy. If you don't have buttermilk or yogurt, you can use regular milk, but the pancakes may not be as light and fluffy.
  • Let the batter rest for at least 15 minutes before cooking. This will allow the buckwheat flour to absorb the liquid and will help to make the pancakes more tender.
  • Cook the pancakes over medium heat. If you cook the pancakes over too high heat, they will burn on the outside before they are cooked through on the inside. Medium heat will allow the pancakes to cook evenly.
  • Serve the pancakes with your favorite toppings. Buckwheat pancakes are delicious with butter and maple syrup, but you can also serve them with fruit, whipped cream, or yogurt.
