This recipe is so good that I double it whenever I make it. Since it is peanut butter balls dipped in chocolate it is almost like candy. Real buckeyes are nuts that grow on trees and are related to the horse chestnut.

1 ½ cups peanut butter
1 cup butter, softened
½ teaspoon vanilla extract
6 cups confectioners' sugar
4 cups semisweet chocolate chips

Steps:

  • In a large bowl, mix together the peanut butter, butter, vanilla and confectioners' sugar. The dough will look dry. Roll into 1 inch balls and place on a waxed paper-lined cookie sheet.
  • Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until firm, about 30 minutes.
  • Melt chocolate chips in a double boiler or in a bowl set over a pan of barely simmering water. Stir frequently until smooth.
  • Dip frozen peanut butter balls in chocolate holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Put back on the cookie sheet and refrigerate until serving.

1 1/2 cups peanut butter
1/2 cup margarine or 1/2 cup butter
1 lb powdered sugar
1 teaspoon vanilla
1 1/2 cups chocolate chips
use 1/2 tsp of shortening per oz of chocolate instead paraffin wax

Steps:

  • Mix peanut butter, margarine or butter, powdered sugar, and vanilla in bowl (It helps to soften the margarine).
  • Shape into 1" balls.
  • Refrigerate balls.
  • Meanwhile, melt chocolate with a bit of crisco (so the chocolate will harden. Without crisco, chocolate will remain soft.) in double boiler.
  • Insert toothpick into refrigerated balls and dip into chocolate, leaving small area resembling a buckeye.
  • Cool on wax paper and store in refrigerator or freezer.

I make about 30 varieties of cookies and candies during the holidays and these are the most requested. They are fairly easy and delicious. I serve them on a tray in miniature muffin liners. I have tried many different buckeye recipes, but this one, given to me years ago, is the best one I have used. ADDED 12/17/06: Instead of chips and paraffin wax, this year I used chocolate bark coating and it worked really well. You will need about Five - 2 oz. blocks of bark.

1 (18 ounce) jar creamy peanut butter
1/2 cup butter (softened) or 1/2 cup margarine (softened)
1 lb confectioners' sugar (about 3.5 cups)
1 tablespoon vanilla
12 ounces chocolate chips (milk or semi-sweet)
3 -4 ounces paraffin wax (I use 1/4 of a standard block)
use 1/2 tsp of shortening per oz of chocolate instead paraffin wax

Steps:

  • Cream peanut butter and butter.
  • Add sugar and vanilla and mix well.
  • Form into 1 inch balls and refrigerate.
  • Melt chocolate chips with parafin wax in a double boiler.

1 teaspoon vanilla extract
Pinch kosher salt
1 cup confectioners' sugar
3/4 cup chopped toffee candy bars, such as Heath (3 bars)
12 ounces semisweet chocolate, chopped

Steps:

  • Combine the peanut butter, vanilla and salt in a large bowl. Beat with an electric mixer, adding about 1/2 cup confectioners' sugar at a time, until all the sugar is incorporated and the mixture is stiff and dry to the touch. Mix the toffee by hand.
  • Roll the mixture into 1-inch balls (about 32) and place on plates. Insert a toothpick into the center of each ball and freeze until firm, 1 hour.
  • Once the balls are frozen, put the chopped chocolate in a small, heat-safe bowl. Set the bowl over a saucepan filled with 1/2 inch of barely simmering water (make sure the bottom of the bowl does not touch the water) and heat, stirring, until melted. Remove the balls from the freezer and, one at a time, dip them in the chocolate, leaving a small round of peanut butter still visible. 2 1/2 cups confectioners' sugar
1 1/2 sticks unsalted butter, softened
1/3 cup heavy cream
1 1/2 cups creamy peanut butter
1 teaspoon pure vanilla extract
Kosher salt
8 ounces bittersweet chocolate, chopped

Steps:

  • Sift sugar into a large bowl; set aside. Combine butter, cream, peanut butter, vanilla, and a pinch of salt in a saucepan over medium heat. Cook, stirring, until butter and peanut butter are just melted. Pour over sugar in bowl and whisk until smooth. Transfer to an 8-inch square baking dish and smooth surface. Place parchment or plastic wrap directly on surface of mixture and refrigerate until set, about 2 hours.

1 lb powdered sugar (3-3/4 cups)
1 (12 ounce) package chocolate chips (your choice of milk, semisweet, or white)

  • Mix peanut butter, margarine, and sugar together.
  • Roll into small balls and chill.
  • Melt chocolate chips and about 1/4 of 1 bar of grated paraffin together in microwave for 1 minute at 70% power. Stir.   • 1) Using a stand mixer (preferably) or hand mixer, beat the Nutter Butters and cream cheese together for 2 minutes. 2) Add in 10 of the Butterfinger® Fun-Size Bars and beat until smooth. If the mixture is too sticky to roll into balls and refrigerate the mixture for 30 to 60 minutes. 3) Roll the mixture into about 36 1-inch balls. Place them on a baking sheet covered in wax paper and put them in the freezer to harden for about 30 minutes (this will make them easier to dip in the chocolate Candiquik). 4) Chop the remaining two Butterfinger® Fun-Size Bars finely and set aside. 5) Melt the chocolate Candiquik according to the package directions. 6) Using a fork or a toothpick, dip the frozen buckeyes in the chocolate Candiquik, covering completely.
