If turkey's not your thing substitute 85-90% lean ground beef. You can also add in 1 1/2 lb new potatoes (that have been cut in half) to the pan with the meatloaf and sauce when you uncover the meatloaf to bake for the last 45 minutes.

2 lbs ground turkey (preferably dark meat only)
2 eggs
3 ounces tomato paste (1/2 of 1 small can, reserving rest for the sauce)
1 teaspoon salt
1/8-1/4 teaspoon cayenne pepper
1/2 cup plain breadcrumbs
1 small onion, finely chopped
2 garlic cloves, pressed
3 ounces tomato paste (from reserved 1/2 can)
1 small onion, roughly chopped
1 garlic clove, peeled
1 small red pepper, seeded, cored, and roughly chopped
1 cup water
1/2 teaspoon salt
15 grinds black pepper

Steps:

  • Meatloaf:
  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, mix together all the ingredients for the meatloaf and work together completely by hand until all ingredients are evenly distributed and the mixture is uniform. Place meat mixture into a 9 by 13-inch baking dish and shape into a loaf about 11 inches long and 4 inches wide. It is important to form it like this so that it cooks evenly throughout. The loaf should be in the middle of the pan with room on both sides for the sauce to pool.
  • Red Pepper Sauce:
  • Place all ingredients in a blender or food processor and puree until smooth. Cover the meatloaf with the sauce and allow excess sauce to pool around the meatloaf. Cover pan with aluminum foil but avoid contact with meat loaf by leaving at least a couple inches of space between the top of the meatloaf and the foil. Bake for 45 minutes, then uncover and bake 45 minutes longer. Let rest for 15 minutes before cutting and serving.

Number Of Ingredients 18

1/4 to 1/3 cup vegetable oil
1 medium onion, finely food processed
10 ounces challah bread, food processed to crumbs (about 3 1/2 cups)
1 large egg
1/2 teaspoon ground allspice
2 teaspoons salt
25 grinds freshly ground black pepper
1 3/4 to 2 pounds ground turkey
1 tablespoon butter
10-ounces button mushrooms, sliced
1/3 cup medium-dry sherry
1 cup chicken stock
1/4 cup instant flour (Recommended: Wondra)
1 cup half-and-half
2 teaspoons Worcestershire sauce
2 bay leaves
Salt and freshly ground black pepper
1/4 cup tart berry preserves, such as cherry or cranberry

Steps:

  • Preheat oven to 375 degrees F.;
  • Heat 2 tablespoons oil in a large skillet over medium-high heat. Saute onions until soft and translucent. Set onions aside to cool and wipe skillet clean. In a large mixing bowl combine the cooled onions with remaining meatball ingredients. Form the mixture into 1 1/2-inch balls. Heat remaining oil in skillet over high heat. Brown the meatballs on all sides.;
  • For the pan sauce:
  • Set meatballs aside. Add the butter and mushrooms to the pan and saute until lightly browned, about 3 minutes. Add the sherry and chicken stock, to deglaze the pan. Sprinkle in the instant flour and cook until sauce thickens. Add the half-and-half, Worcestershire and bay leaves. Bring to a simmer, whisking often until thickened. Season, to taste, with salt and pepper. Remove pan from heat, add meatballs back to the pan. Bake in the oven for 25 minutes. Discard bay leaves. Serve meatballs with preserves.;

TUKEY BURGERS (ADAPTED FROM BOBBY FLAY'S TURKEY KOFTE RECIPE

I meant to make Turkey Burgers tonight for dinner and found a recipe on Food Network from Bobby Flay which I altered slightly. Although it says Kofte, I thought it would still be yummy...and it WAS! I will say that it's not as much burger as it is kofte or meatloaf-like, but if you want a great recipe for ground turkey, here it is. Enjoy!

2 tablespoons olive oil
3 tablespoons tomato paste
1/4 large yellow onion, finely grated
2 garlic cloves, finely chopped
1/4 teaspoon garlic powder
1 teaspoon curry powder
1/4 teaspoon adobe pepper, finely chopped (could substitute cayenne pepper)
Lawry's Seasoned Salt (I used about 1 teaspoon)
fresh ground black pepper
3/4 tablespoon Worcestershire sauce
1/2 cup oatmeal, ground in grinder
1 1/4 lbs ground turkey, 93 percent lean

Steps:

  • Mix all ingredients except turkey together.
  • Add turkey and mix well.
  • Form into large patties 1/2 inch to 3/4 inch thick.
  • Place onto a plate and separate patties with plastic wrap, then place in fridge for at least 1 hour to let flavors meld. (I pre-made the patties before-hand as I did not want to have to do them later. You could place the whole bowl in the fridge then form the patties before you cook them too.).
  • When ready to cook, take plate of patties out and place oven on Hi broil.
  • Spray broiler pan with Pam then add the patties.
  • Broil patties about 6-7 inches from heat for 6 minutes one side, flip then broil 6 more minutes. Flip again, broil 2 more minutes then take out and add cheese to melt ontop.
  • For my fixin's, I like to mix my mayo and ketchup together and spread on buns along with some avocado and sauted mushrooms, lettuce and tomato.

Tips:

  • Use a combination of ground turkey and ground pork or beef for a more flavorful meatloaf.
  • Soak the bread crumbs in milk or broth before adding them to the meat mixture. This will help to keep the meatloaf moist.
  • Add some chopped vegetables to the meat mixture, such as onions, celery, or carrots.
