Time 30m

Yield 4 cups

Number Of Ingredients 15

1 large round pumpernickel bread boule
3 tablespoons unsalted butter
1/4 cup minced yellow onion
1 clove garlic, minced
1 tablespoon mustard powder
1/2 teaspoon sweet paprika
3/4 teaspoon cayenne pepper
1 1/2 teaspoons salt, plus more if needed
3 tablespoons all-purpose flour
1 1/2 cups whole milk
8 ounces cream cheese, softened
12 ounces extra-sharp Cheddar, shredded
3/4 cup roasted peppers or pimentos, drained and finely diced
1/4 cup hot green chiles, drained and finely diced
Freshly ground black pepper

Steps:

  • First, prepare the bread boule by slicing off the top 2 inches and hollowing out the center, leaving the walls of the boule about an inch thick. Cut the top and insides of the bread into bite-sized cubes and set aside.
  • In a large saucepan, melt the butter over medium heat. Add the onions and cook until soft and translucent, about 5 minutes. Add the garlic and cook for 1 minute.
  • Whisk in the mustard, paprika, cayenne and salt; cook for an additional 2 minutes. Sprinkle the flour over the onion/garlic mixture and stir to combine; cook about 2 minutes more. Gradually whisk in the milk and gently simmer for 2 minutes. Add the cream cheese and stir until it melts. Then add the Cheddar cheese. Once all the cheeses are melted, stir in the roasted peppers and hot green chiles. Season with black pepper to taste and additional salt, if necessary.
  • Preheat the broiler on high.
  • Scoop the pimento cheese mixture into the hollowed-out bread boule and place on a baking sheet. Broil until the top begins to bubble and lightly brown, a couple of minutes. Place the filled boule on a platter and serve immediately with the bread cubes.

Time 20m

Yield 6 servings

Number Of Ingredients 7

1 pound ground beef
1 can cheese soup with 1/2 can of water
1 (16-ounce) package processed cheese with jalapeno peppers
1 (15-ounce) can kidney beans, well drained
1 (15-ounce) can black beans, well drained

6 medium individual rounds dark rye bread, unsliced

Steps:

  • Saute ground beef in a soup pot over medium high heat until browned, about 5 to 7 minutes. Add canned cheese soup and water and bring to a very gentle simmer. Add the cheese with jalapeno peppers, and stir until melted. Remove from heat. Stir in beans and salsa and bring back to a simmer. Cut off tops of each loaf of bread, and reserve for later. Carefully hollow out center of each loaf leaving 1 1/2-inch shell. Spoon soup into hollowed out bread, allowing some to spill over top of bread cauldron as if bubbling, and replace top of the loaf. Time 40m

Yield 6 to 8 servings

Number Of Ingredients 11

1 8-ounce package cream cheese
2 garlic cloves, minced
1 pinch kosher salt
1/4 cup heavy cream or half and half
1/4 cup mayonnaise
1 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce, more for serving if desired

Celery sticks, chips or chicken wings, for serving

Steps:

  • Scrape mixture into a small (1-quart or smaller) gratin dish or baking pan, and bake until dip is melted and bubbling, 30 to 40 minutes. Sprinkle extra hot sauce on top, if desired, and serve hot or warm, with celery sticks and chips or chicken wings if you like.

Tips:

  • Use a large cauldron or Dutch oven to make the dip. This will allow the dip to bubble and expand without overflowing.
  • Shred the cheese yourself instead of using pre-shredded cheese. Pre-shredded cheese contains additives that can prevent it from melting smoothly.
  • Use a variety of cheeses to create a flavorful dip. Some good options include cheddar, mozzarella, Monterey Jack, and Parmesan.
  • Add some chopped vegetables to the dip, such as bell peppers, onions, or jalapeƱos. This will add flavor and texture to the dip.
  • Serve the dip with a variety of dipping options, such as tortilla chips, bread cubes, or vegetables.

Conclusion:

Bubbling cauldron hot cheese dip is a delicious and easy-to-make appetizer that is perfect for parties or gatherings. With its creamy, cheesy texture and flavorful ingredients, this dip is sure to be a hit with everyone who tries it.
