Indulge in the delectable symphony of flavors that is Brussels sprouts with pancetta and pearl onions. This classic dish combines the earthy sweetness of Brussels sprouts with the savory richness of pancetta and the delicate crunch of pearl onions. It's a perfect side dish for a special occasion or a weeknight dinner.
The recipe starts with roasting the Brussels sprouts until they are caramelized and tender. While they're roasting, you'll cook the pancetta until it's crispy and then add the pearl onions. Once the onions are softened, you'll add the roasted Brussels sprouts and a mixture of balsamic vinegar, honey, and Dijon mustard. The resulting dish is a medley of textures and flavors that will tantalize your taste buds.
For an extra touch of decadence, you can add a sprinkle of grated Parmesan cheese or crumbled goat cheese before serving. This dish is also versatile and can be easily adapted to your preferences. If you don't have pancetta, you can substitute bacon or prosciutto. And if you don't have pearl onions, you can use shallots or even chopped yellow onion. No matter how you make it, this dish is sure to be a hit.
ROASTED BRUSSELS SPROUTS WITH GARLIC AND PANCETTA
For maximum caramelization, make sure the cut side of the Brussels sprouts are flush with the bottom of the baking dish. As the whole thing bakes, the salty pancetta fat will melt over the sprouts imparting luscious porky flavor as the pancetta itself turns crisp.

ROASTED BRUSSELS SPROUTS WITH PANCETTA & PEARL ONIONS
Like many others I am not a fan of brussel sprouts, never made them, never even think of them as a possibility for a dinner vegetable. But this recipe changed my thinking! The dish was brought to Thanksgiving dinner and there was nothing left! The recipe serves 12, but I'm sure it can be easily halved. This is most definitely best when served immediately, but it was just great reheated in the microwave for about a minute and a half.
