ROASTED BRUSSELS SPROUTS WITH BACON & ONIONS FOR TWO

Roasted Brussels Sprouts with Bacon & Onions for Two image

Hearty Brussels sprouts pair nicely with salty bacon and onions in this quick Thanksgiving side dish for two. A sweet balsamic glaze makes a nice complement drizzled over the top, but it's not necessary to enjoy this classic combo. For a twist on this recipe, try swapping pancetta for the bacon. If you want to have leftovers, this recipe is easily doubled.

SAUTEED BRUSSELS SPROUTS WITH BACON AND ONIONS

Sauteed Brussels Sprouts with Bacon and Onions image

This is a simple yet delicious recipe that takes little time to put together. It's a tasty way to incorporate a healthy, and often snubbed, vegetable into one's diet. I've been cooking Brussels sprouts this way for years. I'm not sure where I got the recipe. Using fresh Brussels sprouts is preferred naturally, but if not readily available, frozen Brussels sprouts may be used instead. If using frozen Brussels sprouts, you may have to drain any excess liquid that is rendered while cooking the sprouts.

I came up with this myself. Since brussels sprouts have a similar flavor to cabbage, I have adapted my cabbage recipe for them. My husband thought he did not like brussels sprouts until I made these. I usually have to do a double batch and we end up fighting over the leftovers!!!

ELMO'S NIGHTMARE: BRUSSELS SPROUTS WITH ONIONS AND BACON

Elmo's Nightmare: Brussels Sprouts with Onions and Bacon image

Provided by Robert Irvine : Food Network

Categories     side-dish

Time 30m

Yield 6 servings

Number Of Ingredients 8

1/4 pound bacon, small dice*
1 onion, finely sliced
Salt
1 1/2 pounds Brussels sprouts, leaves only
4 cloves garlic, minced
1/8 cup unsalted butter
2 teaspoons fresh chopped tarragon leaves
Freshly ground black pepper

Steps:

  • In a large deep skillet, over a medium heat, add the bacon. Render the fat and cook until crisp and golden brown. At this point, add the onion and cook until translucent. Remove from heat and set aside.
  • Fill a small saucepan with salted water and bring to a boil over medium heat. Add the sprout leaves and blanch for about 3 minutes. Transfer the leaves to a large bowl of iced water. Drain. Reheat the bacon and onion in the skillet until sizzling, then add the blanched sprout leaves and cook for another 2 minutes.
  • Toss together well and finish with the butter and fresh tarragon. Season with salt and pepper, to taste and transfer to a serving bowl. Serve immediately.

Tips:

  • Choose fresh Brussels sprouts: Look for firm, brightly colored sprouts with tightly closed leaves.
  • Trim and clean the sprouts: Remove any yellow or wilted leaves and cut off the stem end.
  • Slice the sprouts thinly: This will help them cook evenly.
  • Use a large skillet: This will give the sprouts plenty of room to brown and caramelize.
  • Don't overcrowd the skillet: Cook the sprouts in batches if necessary.
  • Cook the sprouts until they are tender-crisp: They should still have a slight crunch to them.
  • Season the sprouts with salt and pepper: Add other seasonings to taste, such as garlic powder, onion powder, or paprika.
  • Garnish the sprouts with fresh herbs: Such as parsley, chives, or thyme.

Conclusion:

Brussels sprouts with onions and bacon is a delicious and versatile side dish that can be served with a variety of main courses. It is easy to make and can be tailored to your own taste preferences. Whether you like your sprouts crispy or tender, this recipe is sure to please. So next time you're looking for a healthy and flavorful side dish, give Brussels sprouts with onions and bacon a try.
