Hearty Brussels sprouts pair nicely with salty bacon and onions in this quick Thanksgiving side dish for two. SAUTEED BRUSSELS SPROUTS WITH BACON AND ONIONS

Sauteed Brussels Sprouts with Bacon and Onions image

This is a simple yet delicious recipe that takes little time to put together. It's a tasty way to incorporate a healthy, and often snubbed, vegetable into one's diet. I've been cooking Brussels sprouts this way for years. I'm not sure where I got the recipe. Using fresh Brussels sprouts is preferred naturally, but if not readily available, frozen Brussels sprouts may be used instead. If using frozen Brussels sprouts, you may have to drain any excess liquid that is rendered while cooking the sprouts.

SHREDDED BRUSSELS SPROUTS WITH BACON AND ONIONS

Shredded Brussels Sprouts With Bacon and Onions image

I love Brussels sprouts and think they have an undeserved bad reputation with so many because they are often overcooked. (Cooking Brussels sprouts releases sulfur compounds; when overcooked, they develop an unpleasant sulfurous flavor and smell.) In this recipe, adapted from Eating Well (October/November 2006), a small amount of bacon goes a long way to impart its wonderful, smoky flavor to the sprouts.

BRUSSELS SPROUTS WITH ONION AND BACON

Brussels Sprouts With Onion and Bacon image

Lisa's right, these roasted Brussels sprouts are delicious and tasty. Plus, it's super easy to prepare. The Brussels are tender and have a delicious savory flavor (thanks to butter, garlic, and diced onion). Our favorite part, though, are the crispy bits of smoky bacon in every bite. This makes a wonderful side dish.

Provided by Lisa Johnson

Categories     Vegetables

Time 40m

Number Of Ingredients 6

1/2 lb lean bacon, finely diced
1 c diced yellow onion
2 clove garlic, minced
2 lb Brussels sprouts, trimmed
2 c chicken broth
4 Tbsp (1/2 stick) butter or margarine

Steps:

  • 1. In a heavy-bottomed pot over medium heat, fry the bacon until crisp. Remove the bacon and drain on paper towels.
  • 2. Saute the onion and garlic in the bacon grease over low heat until soft, about 3 minutes.
  • 3. Add the Brussels sprouts and stir them around so that they are coated with the bacon grease. Add the broth and cook, covered, over low heat until the sprouts are easily pierced with a fork, about 12-15 minutes.
  • 4. Stir in the butter and bacon just before serving.

Tips:

  • Choose small and firm Brussels sprouts: Smaller sprouts are sweeter and more tender, while firm sprouts will hold their shape better during cooking.
  • Trim the Brussels sprouts properly: Cut off the stem end and any outer leaves that are tough or discolored.
  • Cook the Brussels sprouts until they are tender-crisp: Overcooking will make them mushy, so aim for a slightly firm texture.
  • Use high-quality bacon: Thick-cut bacon will add more flavor and texture to the dish.
  • Don't overcrowd the pan: When cooking the Brussels sprouts and bacon, make sure there is enough space in the pan so that everything can cook evenly.
  • Season the Brussels sprouts well: Salt, pepper, and garlic powder are all great ways to add flavor to the sprouts.
  • Serve the Brussels sprouts immediately: They are best enjoyed hot and fresh out of the pan.

Conclusion:

Brussels sprouts with bacon and onions is a classic side dish that is easy to make and always a crowd-pleaser. The combination of sweet and savory flavors is sure to be a hit at your next dinner party or potluck. With just a few simple ingredients, you can create a dish that is both delicious and nutritious. So next time you're looking for a tasty and healthy side dish, give Brussels sprouts with bacon and onions a try.
