Tips:

  • Choose fresh, firm Brussels sprouts. Look for sprouts that are bright green and have tightly closed leaves.
  • Trim the Brussels sprouts. Cut off the stem end and any damaged or discolored leaves.
  • Blanch the Brussels sprouts. This will help to preserve their color and texture. To blanch, bring a large pot of salted water to a boil. Add the Brussels sprouts and cook for 2-3 minutes, or until they are bright green and tender-crisp. Drain the Brussels sprouts and immediately transfer them to a bowl of ice water to stop the cooking process.

Stir in the flour and cook for 1 minute, or until the mixture is golden brown. Gradually whisk in the chicken broth and lemon juice. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened. Season with salt and pepper to taste.
