BRUSSELS SPROUTS GRATIN

Brussels Sprouts Gratin image

The most indulgent way to eat any vegetable is to bathe it in cream and top it with cheese, but few benefit from that treatment as much as brussels sprouts do. Whether or not you decide to top them with crispy bread crumbs (you should), the end result is a decadent, but never too heavy, side dish that could easily become your main course.

Time 45m

Yield 6 servings

Number Of Ingredients 8

1 1/2 pounds brussels sprouts, ends trimmed and halved lengthwise
2 large shallots, peeled and quartered lengthwise
2 cloves garlic, peeled and thinly sliced
5 tablespoons olive oil
Kosher salt and black pepper
1 1/2 cups coarse bread crumbs or panko
3/4 cup heavy cream
1 cup grated Gruyère (about 3 ounces)

Steps:

  • Heat oven to 425 degrees.
  • Toss together brussels sprouts, shallots, garlic and 2 tablespoons olive oil in a 9-by-13-inch baking dish. Season with salt and pepper and roast, tossing occasionally until sprouts are bright green and just tender (think al dente), 12 to 15 minutes.
  • Meanwhile, combine bread crumbs with remaining 3 tablespoons olive oil and season with salt and pepper. Set aside.
  • Pour cream and scatter Gruyère over sprouts and toss to coat. Continue to roast until cream is reduced by about half and sprouts are beginning to brown, another 12 to 15 minutes.
  • Scatter bread crumbs over sprouts and return to oven until golden brown and crisp, 5 to 8 minutes. Let sit 1 to 2 minutes at room temperature before serving.

CRISPY ROASTED BRUSSELS SPROUTS AND SHALLOTS

Crispy Roasted Brussels Sprouts and Shallots image

Slivered brussels sprouts and shallots caramelize, getting crisp and golden if you roast them at high heat. A dash of Worcestershire and a drizzle of lemon juice add just enough tang and acidity to round them out, without obscuring their natural sweetness. If you're not cooking for a crowd, feel free to halve the recipe and use one baking sheet. Serve these as a simple side dish to roast meats or fish, or use it to top a grain bowl, adding a fried or jammy egg for protein.

BRUSSELS SPROUTS GRATIN WITH CARAMELIZED SHALLOTS WS

Brussels Sprouts Gratin With Caramelized Shallots WS image

From Williams Sonoma. My step-daughter asked me to make this to convince her DH that Brussels sprouts were worth eating. W-S is no longer carrying the 8-oz. jars of Caramelized Brussels Sprouts, but Ina Garten's recipe seems to match the jar's ingredients listing; 1 pound of shallots will yield just over 1 cup of caramelized shallots. DH thought the red wine vinegar made these shallots "pickle-y", so I will try balsamic vinegar next time. The shallots may be prepared up to 2 days in advance and refrigerated. Given the unpredictability of Brussels sprouts off-season, I'm betting on Green Giant Steamable Brussels Sprouts, thawed: I have to SELL these sprouts to a non-believer! We thought this recipe had too many things going on and nothing stood out; the Brussels sprouts could have been broccoli (except broccoli would have disintegrated totally in this treatment)

BRUSSELS SPROUT AND CARAMELIZED SHALLOT GRATIN

BRUSSELS SPROUT AND CARAMELIZED SHALLOT GRATIN image

Categories     Vegetable

Yield 8 servings

Number Of Ingredients 24

For the Caramelized Shallots:
1 tablespoon unsalted butter
6 - 8 shallots thinly sliced lengthwise
1 teaspoon sugar
Kosher salt
Freshly ground pepper
For the Gratin:
1 tablespoon unsalted butter
Kosher salt
2 pounds brussels sprouts, trimmed and halved
2 tablespoons flour
8 oz. Gruyere, grated
1/2 oz. Parmesan, grated
1 teaspoon lemon zest
3/4 teaspoon freshly ground black pepper
1 cup heavy cream
1 cup caramelized shallots
For the Topping:
3 cups coarse fresh breadcrumbs (used a baguette)
3 tablespoons unsalted butter, melted
1 1/2 teaspoons lemon zest
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground pepper
2 tablespoons minced fresh flat leaf parsley

Steps:

  • For the Caramelized Shallots: Warm the butter in a medium, heavy bottom saucepan over medium-low heat. Add sliced shallots and season with sugar, a pinch of salt and a few turns of freshly ground pepper. Cook shallots until caramelized (light brown and soft), stirring frequently. This should take 15 - 20 minutes. Reserve 1 cup of caramelized shallots for the gratin. Refrigerate any leftovers. For the Gratin & Topping: Preheat oven to 375. Grease a 9x13 baking dish. Set aside. Prepare an ice bath. Also set aside. Fill a large pot 3/4 of the way with water and bring to a boil over high heat. Once boiling add a handful of salt. Drop in the brussels sprouts and cook until just tender (about 5 minutes). Using slotted spoon, transfer to ice bath. Drain and gently dry with paper towels. In a large bowl, stir together the flour, Gruyere, Parmesan, lemon zest, 2 teaspoons of kosher salt and the freshly ground pepper. Add the cream, brussels sprouts and caramelized shallots, stirring to combine. Transfer the mixture to the prepared baking dish and smooth out the top. To make the topping, add bread crumbs, melted butter, lemon zest, salt, pepper and parsley to a medium bowl, stirring to combine. Sprinkle the topping evenly over the gratin. Bake until the bread crumbs are golden brown (30 - 35 minutes). Let the gratin rest for 10 - 15 minutes before serving.

Tips:

  • Choose fresh and firm Brussels sprouts: Look for Brussels sprouts that are deep green in color and have tightly closed leaves. Avoid any sprouts that are yellowed or have brown spots.
  • Trim the Brussels sprouts properly: Cut off the stem end of each Brussels sprout and remove any discolored or damaged outer leaves.
  • Blanch the Brussels sprouts before roasting: This will help them retain their bright green color and slightly soften them, making them more tender when roasted.
  • Roast the Brussels sprouts until they are tender and slightly browned: This will take about 20-25 minutes in a 400°F oven.
  • Caramelize the shallots slowly: This will help them develop a deep, rich flavor. Be patient and don't rush the process.
  • Use a good quality Gruyère cheese: This will give the gratin a rich, nutty flavor. Avoid using pre-shredded cheese, as it doesn't melt as well.
  • Serve the gratin hot: This is when it is at its best. Leftover gratin can be reheated in the oven or microwave.

Conclusion:

Brussels sprout and caramelized shallot gratin is a delicious and elegant side dish that is perfect for any special occasion. It is easy to make and can be prepared ahead of time, making it a great option for busy weeknights. With its combination of roasted Brussels sprouts, caramelized shallots, and melted Gruyère cheese, this gratin is sure to be a hit with everyone at the table.
