1/3 cup canola oil
1/2 pound sliced fresh mushrooms
3 small zucchini, chopped
2 medium onions, chopped (about 1-1/2 cups)
1 medium green pepper, chopped
2 cups cubed fully cooked ham
2 garlic cloves, minced
2 packages (8 ounces each) cream cheese, softened
1/2 cup half-and-half cream
12 large eggs, lightly beaten
4 cups cubed day-old bread
3 cups shredded cheddar cheese
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a Dutch oven, heat oil over medium-high heat. Add the vegetables and ham; cook and stir until vegetables are tender. Add garlic; cook 1 minute longer. Drain and pat dry. , In a large bowl, beat cream cheese and cream until smooth. Gradually beat in eggs. Stir in the remaining ingredients and vegetable mixture., Transfer to two greased 11x7-in. baking dishes. Bake, uncovered, at 350° for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before serving.

This was served at my sister-in-laws baby shower along with a wonderful salad with balsamic dressing and seasonal fruits. It was so elegant. I had to ask for the recipe it was so delicious! My mother-in-law asked her friend for the recipe and here it is! I couldn't believe how easy it is to make. This is great when you have company staying over and you don't want to be in the kitchen first thing in the morning cooking. You put this together in the evening the night before. 1 loaf French bread (4 cups cubed)
10 eggs
4 cups milk
1 teaspoon dry mustard
1/4 teaspoon onion powder
1 teaspoon salt
1 teaspoon Worcestershire sauce (optional)
8 -10 slices bacon (crumbled)
2 cups cheddar cheese (shredded)
1/2 cup fresh tomato (chopped)
1/2 cup mushroom (sliced)

Steps:

  • Butter a 13 x 9 inch casserole dish.
  • Arrange bread cubes in casserole dish. Sprinkle with shredded cheddar cheese.
  • Beat together the eggs, milk, dry mustard, onion powder, salt and worcestershire sauce. Pour over the bread and cheese in the casserole dish.
  • Sprinkle with crumbled bacon, mushrooms and chopped tomatoes.
  • Cover and chill overnight.

1 loaf italian bread (9x5 inches), cut into 1/2 inch slices
6-8 eggs
21/2 c. milk
1/2 c. heavy cream
Herbs to taste (dried oregano or thyme, fresh basil or parsley)
1/2 cups parmesan or romano, grated
1 lb (16 oz) spicy vegetarian sausage, sliced
2 large shallots or 1 bunch scallions, finely chopped
1 red or green pepper, thinly sliced
2-3 c. cheddar (or similar) cheese, grated
1/2 pint cherry tomatoes, sliced in half

Steps:

  • Butter a standard (9x13) casserole dish. Combine eggs, milk, cream, herbs and parmesan or romano thoroughly (If you're using whole milk you don't need the cream--just replace it with more milk). Heat a tablespoon or so of oil in a medium skillet. Sauté the sausage over medium-high heat until browned. Remove from pan. Add a little bit more oil and the shallots or scallions and the pepper. Sauté until slightly softened. Combine with sausage. Assemble the strata. Place a layer of bread slices on the bottom of the dish. Tear little bits off extra slices to fill in gaps. Cover with half the sausage/pepper mixture. Pour half the egg mixture over and than sprinkle on half the cheese. Repeat. Top with cherry tomatoes. Cover and refrigerate until needed, at least 20 minutes. Uncover and bake at 350 degrees 45 minutes to 1 hour. Variation Ideas: Mediterranean strata: Use a combination of artichoke hearts, olives, sun-dried tomatoes, feta cheese and other Mediterranean ingredients. Swiss strata: How about onions, mushrooms, spinach and Swiss cheese? Simple strata: Steamed broccoli and tomatoes.

1 prepared angel food cake (10 to 12 ounces), cut into 1-inch cubes
1 package (8 ounces) cream cheese, softened
1 tablespoon sugar
1 teaspoon salt

2 cups fresh strawberries, chopped
2 cups fresh blueberries
Coarse sugar
Sweetened whipped cream, optional

Steps:

Great recipe for Christmas brunch or any brunch. You can put it all together the day before and just pop it in the oven. If you wish to bake it right away that's fine too but let it sit at room temp for about 1/2 hour so the bread has a chance to absorb the egg. This recipe is favorite of mine but originally came from "Company's Coming for Christmas".

12 slices your favorite bread, crusts removed
2 cups aged cheddar cheese, grated
8 large eggs, beaten
1/2 teaspoon onion powder
1 teaspoon Worcestershire sauce
1/2 teaspoon mustard powder
salt & pepper
2 2/3 cups milk
2 lbs your favorite sausages, slipped out of their casings (Brats, hot Italian etc)

Steps:

  • Grease a 9x13-inch baking dish.
  • Scramble fry the sausage meat until cooked, drain off all the fat.
  • Line the greased dish with 6 slices of bread.
  • Sprinkle in the cheese.
  • Pour the fried sausage meat over the cheese layer.
  • Cover meat with remaining slices of bread.
  • Beat the eggs together with milk, salt, pepper, onion powder, Worcestershire sauce, & mustard powder.
  • Pour over the bread in the baking dish.
  • Cover & refrigerate overnight.
  • When you are ready to bake it preheat oven to 350°F Have the strata dish close to room temperature (so you don't crack the baking dish with it being too cold). Bake for approx 1 hour or until set.

Tips:
