Time 40m

Yield 4 serving(s)

Number Of Ingredients 12

2 cups refrigerated hash browns, shredded
3 tablespoons butter, divided
6 eggs
1/2 cup milk
1 (4 ounce) can green chilies, chopped
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
12 slices bacon, cooked and crumbled
8 ounces monterey jack cheese, shredded
1 cup salsa
4 (10 inch) flour tortillas, warmed

Steps:

  • In a large skillet, cook the potatoes in 2 Tbs butter over medium heat for 6-7 minutes or until golden brown, stirring occasionally.
  • In a small bowl, whisk the eggs, milk, chilies, and seasonings.
  • In another large skillet, heat remaining butter until hot.
  • Add egg mixture; cook and stir over medium heat until eggs are completely set.
  • Layer 1/3 cup potatoes, about 1/2 cup egg mixture, 1/4 cup bacon, 1/2 cup cheese and 1/4 cup salsa off center of each tortilla.
  • Fold sides and ends over filling and rool up.
  • Serve immediately.

Tips:

  • Prep your ingredients in advance: Chop your veggies, cook your bacon or sausage, and scramble your eggs ahead of time to save time and make assembly a breeze.
  • Use high-quality tortillas: Fresh, soft tortillas will make your burritos much more enjoyable to eat. Look for tortillas that are pliable and have a slightly chewy texture.
  • Don't overload your burritos: It's tempting to pack your burritos with as many fillings as possible, but it's important to resist the urge. Overstuffed burritos are difficult to eat and will likely fall apart.
  • Be generous with the cheese: Cheese is what holds all the ingredients together in a breakfast burrito. Use a good quality cheese that melts well, such as cheddar, Monterey Jack, or pepper Jack.
  • Add salsa or hot sauce: A little bit of spice can really wake up your breakfast burrito. Add salsa, hot sauce, or Sriracha to taste.

Conclusion:

Breakfast burritos are a delicious and portable way to start your day. They're also incredibly versatile, so you can customize them to your liking. Whether you like them simple or loaded with fillings, there's a breakfast burrito out there for everyone. So next time you're looking for a quick and easy breakfast, give one of these recipes a try.
