Steps:

  • Preheat the oven to 350 degrees. Line a 12-count muffin tin with cupcake liners, and spray generously with nonstick cooking spray. Set aside.
  • In a saucepan over low heat, melt the butter and 8 ounces of chocolate. Stir until smooth. Remove from heat, and set aside.
  • In a large bowl, whisk together eggs and sugar. Add flour, cocoa, and baking soda. Stir in the melted chocolate until combined. Stir in remaining 3 ounces of chocolate and nuts if desired.

  • For cupcakes:
  • Preheat oven to 350°F. Line 10 standard (1/3-cup) muffin cups with paper liners. Combine butter, 1/2 cup chocolate chips, and unsweetened chocolate in top of double boiler set over simmering water. Stir until mixture is melted and smooth. Remove from over water. 1 cup cocoa powder, unsweetened
2 teaspoons cinnamon

Steps:

  • Preheat oven to 350°F Mix flour, cocoa powder, cinnamon, baking powder and salt in medium bowl. Set aside.
  • Mix sugar, applesauce, eggs and vanilla in large bowl until well blended. Gradually stir in flour mixture until well mixed. Stir in chocolate chips. Spoon 1/4 cup batter into each of 15 paper-lined muffin cups.

1/2 cup mint chocolate chips
1/2 cup butter, cubed
1/2 cup sugar
2 eggs
1/2 cup all-purpose flour

2 cups miniature marshmallows
1/3 cup 2% milk
1/2 teaspoon peppermint extract
Green or red food coloring, optional
3/4 cup heavy whipping cream, whipped
Additional chocolate chips, optional

Steps:

  • In a large microwave-safe bowl, melt chips and butter; stir until smooth. Cool slightly; stir in sugar and eggs. Gradually stir flour into chocolate mixture until smooth. , Fill paper-lined muffin cups two-thirds full. Bake at 350° for 15-20 minutes or until a toothpick inserted in the center comes out clean. Remove from pan to a wire rack to cool. , In a large saucepan, cook and stir marshmallows and milk over low heat until smooth. Remove from the heat; stir in extract and food coloring if desired. , Transfer to a bowl; refrigerate for 15 minutes or until cooled. Fold in whipped cream. Spread over cupcakes. Refrigerate for at least 1 hour. Sprinkle with additional chocolate chips if desired. Store in the refrigerator.

Made these last year for Passover and they were such a treat. When looking through my Passover recipes this year I came upon this again and since I could not find it on Zaar I thought I'd post it. Hope you'll like it. The prep. time does not include the "thickening" time.

9 ounces bittersweet chocolate
1 cup butter (255g) or 1 cup margarine (255g)
2 tablespoons butter or 2 tablespoons margarine
5 eggs, lightly beaten
1 1/3 cups sugar
3 tablespoons matzo cake meal

Steps:

  • Preheat oven to 325 degrees F/160 degrees Celsius.
  • Roughly chop the chocolate into pieces
  • Put the chocolate in a medium-sized bowl and add the one cup of butter.
  • Place the bowl over a saucepan of simmering water, stir until the two ingredients have melted.
  • Mix well and transfer to a large bowl; set aside.
  • Sift the sugar and matzoh cake meal together, then stir into the chocolate.
  • Add the eggs and mix well.
  • Cover and let stand at room temperature for 30 minutes.
  • The batter will slightly thicken.
  • In the meantime, line a muffin pan with paper cupcake or grease with the 2 tbs butter or margarine.
  • Spoon 1/4 cup batter into each cup.
  • Bake in preheated oven for 30 to 35 minutes. The brownies will still be moist when done; they will puff up and fall slightly as they cool.
  • Remove from oven and cool in pan for 5 minutes, then remove from pan and let cool completely.

2/3 cup unbleached all-purpose flour, spooned and leveled
1/4 cup unsweetened cocoa powder
1/2 teaspoon kosher salt
1 stick (1/2 cup) unsalted butter, cut into pieces
6 ounces bittersweet (61 percent cacao) chocolate, chopped
1 1/2 cup sugar
3 large eggs, lightly beaten
1 teaspoon pure vanilla extract
8 ounces white chocolate, chopped
1/2 cup heavy cream
1 teaspoon white gel-paste food color
2 drops purple gel-paste food color
2 drops violet gel-paste food color
Sugared edible flowers, such as pansies, for decorating

Steps:

  • Cupcakes: Preheat oven to 350 degrees. Line a standard muffin tin with paper liners. In a medium bowl, whisk together flour, cocoa, and salt.
  • Melt butter and chocolate in a heatproof bowl set over (not in) a pot of simmering water, stirring occasionally, until smooth. Remove from heat and add sugar, stirring to combine with a rubber spatula. Add eggs and vanilla; stir until emulsified. Add flour mixture and stir until just combined.
  • Divide batter evenly among muffin cups. Bake until cupcakes are just set, 22 to 24 minutes. Transfer tin to a wire rack and let cool completely. Carefully remove cupcakes from tin without loosening cakes from liners.
  • Glaze: Place white chocolate in a small heatproof bowl. Bring cream just to a boil in a small saucepan, then pour over chocolate. Let stand 3 minutes until chocolate has softened, then stir with a rubber spatula until emulsified. Stir in white food color, then stir in purple and violet food colors, one drop at a time, until desired color is reached.
  • Pour glaze over cooled cupcakes, filling just to tops of liners. Poke any air bubbles with a toothpick or small skewer. Let stand at room temperature until glaze has set, about 15 minutes. Decorate with sugared pansies. Let stand at room temperature until glaze has set completely, about 1 hour. Cupcakes can be stored in an airtight container at room temperature up to 2 days.

PEANUT BUTTER FILLED FUDGE BROWNIE CUPCAKES



Peanut Butter Filled Fudge Brownie Cupcakes image

If you enjoy peanut butter cups you are in for a real sweet treat. I make these on occasions in keeping them special. Very rich and satisfying filling that chocolate craving. Don't count on them lasting too long. Makes 2 dozen. I mix my brownies from scratch but you certainly could use the family size brownie mix.

1-2/3 c sugar
3/4 c butter (softened)
2 Tbsp water
2 large eggs
2 tsp vanilla
1-1/3 c flour
3/4 c cocoa powder
1/2 tsp baking powder

FILLING
1/2 c powdered sugar
1/2 c peanut butter
2 Tbsp butter (softened)
1 tsp vanilla
1/4 tsp salt
TOPPING
1/2 c whipping cream or evaporated milk
1 c semisweet chocolate chips
1 Tbsp peanut butter

Steps:

  • 1. Preheat oven 350. Line 12 muffin cups with paper liners. BROWNIE BASE: In large bowl mix brownie base ingredients: butter, sugar, and water. Add the eggs and vanilla stirring to combine. Combine dry ingredients and stir additions into the batter until all is combined.
  • 2. Fill your cupcake pan (liners in place) with a rounded Tablespoon of the brownie batter. You want to adjust this amount leaving enough batter to bake 24 cupcakes. Bake 10 minutes.
  • 3. Remove pans from oven and place on wire racks. I use a rounded measuring Tablespoon pressing to create indents in the still warm brownies. Move onto your second batch of 12 paper lined cupcake brownies. Repeat the cooling step and create the rounded indentation in each. Work in a continued pattern and make the filling next.
  • 4. FILLING - Take a small mixing bowl and combine all of the ingredients. Mix by hand adding more powdered sugar if necessary while creating a peanut butter filling that leaves the sides of the bowl. After the brownies are cooled enough to handle take a rounded teaspoon of the filling and place on top of the brownie indentations.
  • 5. TOPPING: I use the canned evaporated milk (not condensed sweetened) placing it in a 1-quart sauce pan. Heating the pan slowly stir in the chocolate chips and peanut butter until combined well. It will remain glossy and begin clotting together resembling pudding without boiling. I use a wooden spoon to stir the topping and then take a spoon full and slowly drip it on top of the peanut butter filling.
  • 6. Refrigerate these bundles of joy about 10-15 minutes and serve whenever. These never last more than 2 days in my house while many are taken home for later snacking by visiting family.

Tips:

  • For fudgy brownies, use more butter and less flour. For cakier brownies, use less butter and more flour.
  • Use high-quality chocolate for the best flavor. A chocolate with a cocoa content of at least 70% is ideal.
  • Don't overmix the batter. Overmixing will result in tough, dense brownies.
  • Bake the brownies until a toothpick inserted into the center comes out with just a few moist crumbs attached.
  • Let the brownies cool completely before frosting or serving. This will help them to set and firm up.
