ZUCCHINI BREAD MADE WITH BROWN SUGAR AND MOLASSES

Zucchini Bread Made With Brown Sugar and Molasses image

I have been making this zucchini bread for years now. I got it from a friend of mine and we used to make it and give it out for Christmas in baskets. Everyone seems of love it and always want more. This bread will come out darker, but is not as sweet as made with white sugar. If you have a regular zucchini bread recipe just substitute the white sugar with brown. You also can add 1/2 cup of white sugar instead of 2 cups of brown if you want a lighter bread.

Tips:

  • Measuring Ingredients Accurately: Use measuring cups and spoons to ensure precise measurements of ingredients, especially for baking recipes like zucchini bread. This helps achieve the desired texture and flavor.
  • Fresh Zucchini: Choose fresh, tender zucchini for the best flavor and texture. Older zucchinis may have a bitter taste and a tough texture.
  • Grating Zucchini: Use a box grater or a food processor to grate the zucchini. Grating helps incorporate the zucchini evenly into the batter.
  • Mixing the Batter: Mix the dry ingredients (flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg) in a separate bowl before combining them with the wet ingredients. This helps prevent over-mixing and ensures even distribution of the dry ingredients.
  • Do Not Over-mix: Over-mixing the batter can result in a tough and dense loaf. Mix just until the ingredients are combined and no dry pockets remain.
  • Baking Temperature: Preheat the oven to the correct temperature before baking the zucchini bread. This helps ensure even baking and prevents the loaf from sinking in the middle.
  • Baking Time: Check the doneness of the zucchini bread by inserting a toothpick or a skewer into the center. If it comes out clean or with just a few moist crumbs attached, the bread is done. Over-baking can dry out the loaf.
  • Cooling the Bread: Allow the zucchini bread to cool completely in the pan before transferring it to a wire rack. This helps prevent the loaf from crumbling.
