2 medium-sized sweet potatoes, *not yams!* (unpeeled)
3 tbl. canola oil, more if needed
1 Tbl. dark brown sugar
1/2 tsp. seasoned salt, i use "johnny's"
1/2 tsp. coarse ground pepper
1/4 tsp. cinnamon
1/8 tsp. garlic powder
1/8 tsp. paprika

Steps:

  • 1. *You can tell if they are actual sweet potatoes because at least one end, sometimes both, will have a sharp point, (not rounded like russets.) They also usually come individually wrapped and say that they are sweet potatoes. They are very sweet compared to yams, hence their name. Hope that helps!
  • 2. Preheat oven to 425. Line a baking sheet with foil and spray well with butter-flavored cooking spray. Unwrap potatoes and rinse off with cool water. With sharp long knife, trim off woody pointed ends, then cut potatoes in half lengthwise and set cut-side down for easy and stable cutting of the rest as they are very hard and a bit difficult to cut. Continue cutting into wedges or french fries. I cut mine into about a 1/2" square around. *Baking time will depend on size so keep that in mind. Place fries onto prepared pan and drizzle with oil. Toss to coat. EVENLY sprinkle with rest of ingredients. Toss again WELL to mix and evenly disperse seasonings scootching potatoes across the surface to incorporate all of the ingredients. Spread out in a single layer with any of the skin sides facing upwards. Pop into oven and bake for 15 minutes. Remove from oven, turn each one with tongs, pop back into oven and bake another 10 minutes. Remove from oven leaving door open and turn oven down to LOW (200 degrees), loosen fries from foil a bit and pop back in until ready to serve. Mine were in there for another 10 minutes while I finished preparing other dinner items. *They can also sit out further for a bit, too, so no worries that they have to be piping hot to serve. Warm was just as good if not better!

2 tablespoons firmly packed brown sugar
1 tablespoon granulated garlic
1 teaspoon smoked paprika
1 teaspoon kosher salt

Peanut or vegetable oil, for frying
3/4 cup cornstarch
3/4 cup seltzer water
1/2 cup Carolina mustard barbecue sauce
3 tablespoons mayonnaise

1/3 cup mayonnaise

  • Fry the potatoes a second time, in batches, until browned and crispy, 4 to 5 minutes. Remove to the lined racks to drain. Sprinkle immediately with the brown sugar seasoning. Serve right away with the sauces.
  • Stir together the garlic and onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container at room temperature.
