3 cups whole milk
1/2 cup (1 stick) unsalted butter
1/2 cup sugar
1 vanilla bean, split lengthwise
6 large eggs
1/4 cup all purpose flour
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon baking soda
1/8 teaspoon salt
8 croissants (about 1 pound), torn into 3/4-inch pieces
1 cup pitted prunes, chopped
1 cup raisins, chopped
1/2 cup coarsely chopped almonds
1 tablespoon grated lemon peel
2 cups sour cream
1/2 cup (packed) golden brown sugar
1 tablespoon grated orange peel
1/2 cup brandy

Steps:

  • Preheat oven to 300°F. Generously butter 8-cup pudding mold, metal bowl, or soufflé dish and sprinkle with sugar. Combine milk, butter, and 1/2 cup sugar in heavy medium pot. Scrape in seeds from vanilla bean; add bean. Simmer gently over medium-low heat until sugar dissolves and mixture is fragrant, stirring occasionally, about 8 minutes (do not boil). Remove pot from heat; cover and let steep 15 minutes. Remove vanilla bean. Whisk eggs in large bowl to blend. Gradually whisk in hot milk mixture.

(Pudding can be made 1 day ahead. Cover and refrigerate. Resteam in 300°F oven 45 minutes to heat through before serving.)
  • Whisk sour cream, brown sugar, and orange peel in medium bowl to blend. Cover and refrigerate at least 30 minutes. (Can be made 1 day ahead. Keep refrigerated.)
  • Remove plastic wrap from warm pudding. Invert onto rimmed platter. Pour brandy over pudding. Carefully ignite brandy. When flames subside, slice pudding into wedges and serve with dollop of sour cream and brown sugar sauce.

Yield Makes 6 servings

Number Of Ingredients 9

2 cups half-and-half
3/4 cup packed dark brown sugar
2 tablespoons cornstarch
2 large egg yolks
1/4 teaspoon salt
1 tablespoon unsalted butter
1/2 teaspoon vanilla
1/2 cup chilled heavy cream
1/4 cup chilled sour cream

Steps:

  • Stir together half-and-half, brown sugar, and cornstarch in a 2- to 3-quart heavy saucepan and heat over moderate heat, stirring occasionally, until sugar is dissolved and mixture is heated through (do not let boil).
  • Whisk together yolks and salt in a medium bowl until smooth, then add hot half-and-half mixture in a slow stream, whisking. Return mixture to saucepan and cook over moderate heat, whisking, until mixture just reaches a boil, then boil, whisking, 1 minute (mixture will thicken). Immediately pour through a fine-mesh sieve into a clean bowl and stir in butter and vanilla until butter is incorporated. Set bowl in a larger bowl of ice and cold water and chill, stirring frequently, until pudding is cool, about 10 minutes.
  • Beat heavy cream with sour cream in a bowl with a whisk until mixture just holds stiff peaks.
  • Divide pudding among 6 small bowls, then top each serving with a generous dollop of cream.

Tips:

  • Use light brown sugar for a more delicate flavor. Dark brown sugar will give the pudding a richer, more molasses-like flavor.
  • Don't overcook the pudding. Overcooked pudding will be dense and rubbery. Cook it just until it is set in the center.
  • Let the pudding cool completely before serving. This will allow the flavors to meld and the pudding to firm up.
  • Serve the pudding with your favorite toppings. Whipped cream, ice cream, or fresh fruit are all delicious options.

Conclusion:

Brown sugar pudding is a classic dessert that is easy to make and always a crowd-pleaser. With its rich, caramel-like flavor and creamy texture, it's sure to be a hit at your next gathering. So next time you're looking for a sweet treat, give brown sugar pudding a try.
