1 cup shortening
1/2 cup butter, softened
1 (1 lb) box light brown sugar
5 large eggs
3 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup evaporated milk
1 teaspoon maple flavoring or 1 teaspoon vanilla extract
1/2 cup butter
1 cup light brown sugar, firmly packed
3/4 cup evaporated milk
3 cups powdered sugar, sifted
1 teaspoon vanilla extract

Steps:

  • Beat shortening,butter and brown sugar at medium speed with an electric mixer 2 minutes or until creamy. Add eggs, one at a time, beating well after each addtion.

2/3 cup milk
1/2 cup butter (do not use margarine)
4 1/2 cups powdered sugar

  • Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups, grease bottoms and sides of muffin cups with shortening and lightly flour, or spray with baking spray with flour.

It's really her personality that grates on me, but she does have quite a few good recipes up her sleeve, and so I can't help but share when I come across one not already posted. This one is a very moist cupcake, with a nice durable frosting, which makes them great to transport. The brown sugar flavor makes them stand out from other cupcakes, and even though they are homemade, and taste like it, they are not overly difficult or time consuming to make.

1 1/2 cups butter (3 sticks)
2 1/4 cups packed light-brown sugar
4 eggs
3/4 cup buttermilk
3 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2 cups confectioners sugar
2 teaspoons vanilla
2 -4 tablespoons milk

Steps:

  • Soften 2 sticks butter.
  • Preheat oven to 325°F.
  • Line muffin pan with paper liners.
