Steps:
- Preheat the oven to 350 degrees F.
- Prepare each pie pan with pie crust.
- Lightly whisk together eggs and add in sugar, butter, and vanilla. You don't want to over-beat your pie filling.
- Pour pie filling into each pie pan. Bake pies on middle rack of oven for 45-55+ minutes or until golden brown. Update: It might need longer based on oven temperatures. Check to see that pie is baked through (if you move it slightly, it shouldn't jiggle).
- Note: You may need to loosely place aluminum foil around pie crust edges to prevent them from getting too brown. I often allow it to cool and then refrigerate it to set up further. Then I warm slightly before serving. Remember, this makes TWO pies.

AMISH BROWN SUGAR PIE
This is an old Amish recipe, also called "Tears on Your Pillow Pie," that I have made for years. I have adapted the recipe as the original was for a fire-powered oven. It's one of my most requested pies. Store in refrigerator but for best taste allow to reach room temperature before serving.

Tips:
- Use a Good Quality Brown Sugar: For the best flavor, use a good quality dark brown sugar, like Muscovado or Demerara. The molasses content in these sugars will give your pie a rich, caramel-like flavor.
- Don't Overbeat the Pie Filling: When mixing together the pie filling, be careful not to overbeat it. Overbeating can cause the filling to become too thick and dense.
- Use a Pie Crust Shield: To prevent the edges of your pie crust from burning, use a pie crust shield. You can also brush the edges of the crust with milk or cream before baking to help them brown evenly.
- Let the Pie Cool Completely Before Serving: Once the pie is baked, let it cool completely before serving. This will allow the filling to set and the flavors to meld together.
Conclusion:
Brown sugar pie is a classic American dessert that is easy to make and loved by people of all ages. With its rich, caramel-like filling and flaky crust, it's the perfect pie to serve for any occasion. Whether you're making it for a special holiday or just because you have a craving for something sweet, this pie is sure to please.
