My family absolutely loves these oat pancakes. I make them every Saturday and Sunday. If I don't, they don't believe it's the weekend! My son's friends often spend the night, and I think it's because they like these oatmeal pancakes so much. They are especially delicious served with molasses and syrup. -Sharon W. Categories     Breakfast

Number Of Ingredients 8

1 egg
2 tbls. canola oil
1 cup milk
1 cup flour
1/2 tsp. salt
1/2 tsp. baking soda
1/3 cup packed brown sugar
1/2 cup plus 2 tbsp quick oats

Steps:

  • Combine egg, oil, and milk. Combine flour, salt, soda, and sugar. Add to egg mix. Stir in oats. Cook.

Tips:

  • Use buttermilk for fluffier pancakes: Buttermilk adds a tangy flavor and helps the pancakes rise.
  • Don't overmix the batter: Overmixing can make the pancakes tough. Mix just until the ingredients are combined.
  • Let the batter rest for a few minutes before cooking: This allows the oats to absorb the liquid and results in a more tender pancake.
  • Cook the pancakes over medium heat: This will help them cook evenly without burning.
  • Serve the pancakes with your favorite toppings: Butter, syrup, fruit, or whipped cream are all delicious options.

Conclusion:

Brown sugar oatmeal pancakes are a delicious and easy-to-make breakfast option. They are perfect for a lazy weekend morning or a quick weekday meal. The oats add a hearty and nutritious twist to the classic pancake recipe. Serve them with your favorite toppings and enjoy!
