CLASSIC BBQ RUB

Classic Bbq Rub image

Editor's note: The recipe and introductory text below are adapted from Elizabeth Karmel's Web site, girlsatthegrill.com . This rub has all the classic barbecue notes: salt, spice, sweet, and smoky. It is particularly great on ribs but works with pork chops and tenderloin, chicken and even catfish for an authentic low 'n slow barbecued flavor.

ALL-PURPOSE DRY RUB

All-Purpose Dry Rub image

Here is a rub that provides a fast, flavorful coating for barbecue: beef, pork, chicken, lamb, venison. It calls for the process known as indirect grilling, in which you build a fire on one side of your grill and cook on the other, so that the meat is never in direct contact with flame. (If you grill this rub directly, the sugar and spices will burn rather than melt into appetizing darkness.) The recipe is forgiving. You might add granulated onion or garlic powder to it, or omit the coriander if you don't have any. Be careful with the paprika, as there are so many different varieties afoot: if it's smoked, you'll need less, and if it's fiery you may need less cayenne. No cayenne? Use red pepper flakes. Adjust the seasonings to your taste, then apply liberally.

Time 5m

Yield 2 3/4 cups

Number Of Ingredients 8

1/2 cup paprika, or 1/3 cup smoked paprika
1/4 cup kosher salt
1/4 cup freshly ground black pepper
1/4 cup brown sugar
1/4 cup chile powder
3 tablespoons ground cumin
2 tablespoons ground coriander
1 tablespoon cayenne pepper, or to taste

Steps:

  • Combine all ingredients in a bowl and mix well with a fork to break up the sugar and combine the spices. Mixture will keep in an airtight container, out of the light, for a few months.

BROWN SUGAR BBQ PORK BUTT

Brown Sugar BBQ Pork Butt image

Categories     Pork     Kid-Friendly     Grill/Barbecue     Small Plates

Yield Serves 4-6

Number Of Ingredients 6

1/4 cup (packed) light brown sugar
3 tablespoons kosher salt
1 tablespoon freshly ground black pepper
1 (4-5-pound) bone-in pork butt
Special Equipment:
Disposable foil tray

Steps:

  • Combine sugar, salt, and pepper in a small bowl. Place pork in foil tray and rub all over with sugar mixture, then cover tray with foil and chill overnight.
  • Prepare a grill for medium, indirect heat, preferably with hardwood or hardwood charcoal. Uncover pork, then place pork in tray over indirect heat and close grill. Grill pork, basting with any juices from pan every 30 minutes and adding coals or wood as needed, until pork is very tender, 4-5 hours; loosely tent pork with foil if it starts to become too dark. Let stand at least 15 minutes before shredding.
  • Do Ahead
  • Pork can be kept covered in the refrigerator after grilling for up to 5 days. When ready to serve, Preheat oven to 250°F. Place pork in a roasting pan with a few tablespoons of water. Cover with foil and rewarm pork until hot, 20-25 minutes.

Tips:

  • Use dark brown sugar: It has a stronger, more molasses-like flavor than light brown sugar, which gives the rub a richer flavor.
  • Add a variety of spices: The spices in this rub give it a complex, flavorful taste. Feel free to experiment with different spices to create your own custom blend.
  • Use a coarse grind: A coarse grind will help the rub adhere to the meat better and give it a more rustic flavor.
  • Apply the rub generously: Don't be afraid to use a lot of rub. The more rub you use, the more flavor the meat will have.
  • Let the rub sit for at least 30 minutes: This will give the spices time to penetrate the meat and develop their flavor.
  • Cook the meat over indirect heat: This will help prevent the rub from burning and will give the meat a more evenly cooked flavor.

Conclusion:

This brown sugar BBQ rub is a delicious and versatile way to add flavor to your favorite meats. It's perfect for ribs, chicken, pork, and even vegetables. With its sweet, smoky, and savory flavor, this rub is sure to be a hit with your family and friends. Here are some additional tips for using this rub:
  • You can use this rub on any type of meat, but it is especially good on ribs, chicken, and pork.
  • This rub can be used as a marinade or a dry rub. If you are using it as a marinade, let the meat sit in the rub for at least 30 minutes before cooking.
  • This rub can be used in the oven, on the grill, or in the smoker. Cook the meat according to the recipe instructions.
  • This rub is also great on vegetables. Try it on roasted potatoes, carrots, or green beans.
