Time 2h

Yield 6

Number Of Ingredients 14

5 slices bacon
1 stalk celery, diced
1 cup fine bread crumbs
1 cup milk
3 eggs
1 teaspoon Worcestershire sauce
1 teaspoon ground black pepper
½ teaspoon onion powder
1 pound ground beef
1 pound ground pork
⅓ cup ketchup
3 tablespoons brown sugar
1 tablespoon dry mustard
½ teaspoon Worcestershire sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
  • Heat remaining bacon grease over medium-high heat. Saute celery in hot grease until soft but not browned, about 5 minutes. Set aside.
  • Combine bread crumbs, milk, eggs, 1 teaspoon Worcestershire sauce, black pepper, onion powder, and sauteed celery in a large bowl. Mix well.
  • Crumble beef and pork into egg mixture and mix together using your hands, making sure not to overmix. Form into a loaf and place into the prepared loaf pan. Place the bacon slices along the top of the loaf long-ways.
  • Bake in the preheated oven on the middle rack for 30 minutes.
  • While the meat is cooking, combine ketchup, brown sugar, dry mustard, and Worcestershire for glaze in a small bowl; mix well.
  • Remove loaf from the oven and drain any fat bubbling around edges and on top. Return to the oven and continue to bake for 25 minutes more. Remove once more, drain fat again, and spoon or brush glaze mixture evenly over the top. Increase oven temperature to 400 degrees F (200 degrees C).
  • Return loaf to the preheated oven and continue to bake until no longer pink in the center, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let sit for at least 10 minutes before cutting and serving.

BROWN SUGAR-BACON MEATLOAF RECIPE - (4.7/5)

Provided by carvalhohm

Number Of Ingredients 15

4 slices bacon, cut in half crosswise
2 t. brown sugar, packed
1 lb. lean ground beef
1/2 lb. ground pork
1 onion, finely chopped
1 red pepper, finely chopped
2/3 c. dry bread crumbs
1 egg, beaten
1/3 c. grated Parmesan cheese
1 t. Cajun seasoning
1 t. Worcestershire sauce
1/2 t. salt
1/4 t. pepper
1/3 c. milk
1/2 c. barbecue sauce

Steps:

  • Toss bacon slices with brown sugar; place in a skillet over medium heat. Cook bacon for 2 to 3 minutes; drain and set aside. In a large bowl, combine remaining ingredients except barbecue sauce. Form into a loaf and place on a lightly greased, aluminum foil-lined baking sheet. Spread barbecue sauce over loaf and top with bacon slices. Bake, uncovered, at 350 degrees for one hour to one hour and 10 minutes, until bacon is crisp and meatloaf is firm. Let stand for 10 minutes before slicing. Serves 6.

Tips:

  • Use high-quality ground beef. The better the quality of the beef, the better the meatloaf will taste. Look for ground beef that is at least 80% lean.
  • Don't overmix the meatloaf mixture. Overmixing can make the meatloaf tough. Mix the ingredients just until they are combined.
  • Use a variety of spices and seasonings. This will give the meatloaf flavor. Some good options include garlic powder, onion powder, paprika, cumin, and chili powder.
  • Add some moisture to the meatloaf mixture. This will help keep the meatloaf moist and juicy. Some good options include eggs, milk, or bread crumbs.
  • Cook the meatloaf in a preheated oven. This will help the meatloaf cook evenly.
  • Let the meatloaf rest before slicing it. This will help the meatloaf hold its shape and prevent it from falling apart.

Conclusion:

Brown sugar bacon meatloaf is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover ground beef. With its sweet and savory flavor, this meatloaf is sure to be a hit with your family and friends.
