Time 50m

Number Of Ingredients 10

1 lb cooked chicken, cut up
1 c cooked brown rice (you may use white rice)
1 1/2 c uncooked broccoli florets (fresh or frozen, if using frozen, microwave for about 3 min. to thaw)
2 Tbsp butter
2 Tbsp cornstarch
1 1/2 c cups fat free milk
salt and pepper to taste

2 Tbsp (or more) . gluten freegluten free bread crumbsbread crumbs (i add italian seasoning to the crumbs)
cream cheese and/or parmesan cheese (amount depends upon your taste - taste - there is no hard and fast amount) to the roux for an alfredo-like casserole.

Steps:

  • 1. Combine chicken, broccoli and rice in an ovenproof casserole dish. Toss to mix.
  • 2. To make the roux: melt the butter in a medium size saucepan. Add the cornstarch and blend thoroughly. While blending, add the milk and seasonings. BROCCOLI AND CHEDDAR QUICHE WITH A BROWN RICE CRUST RECIPE - (4.4/5)

Broccoli and Cheddar Quiche with a Brown Rice Crust Recipe - (4.4/5) image

Provided by LKovac

Number Of Ingredients 9

2 cups cooked brown rice
1/4 cup cheddar cheese, finely grated
5 eggs
1 cup milk
2 cups broccoli, cut into bite sized pieces and blanched
1 cup sharp cheddar cheese, grated
4 green onions, sliced
1 pinch nutmeg (optional)
Salt and pepper, to taste

Steps:

  • Mix the rice, finely grated cheese and one egg in a bowl. Press the rice mixture into a pie plate, about 1/4 inch thick. Bake in a preheated 450 degree F oven until the edges and bottom just start turning golden brown, about 5 to 7 minutes. Mix the remaining eggs, milk, broccoli, sharp cheddar cheese and green onions in a bowl and season with salt and pepper. Pour the egg mixture into the pie crust. Bake in a preheated 375 degree F oven until golden brown and set in the center, about 30 to 35 minutes.

Tips:

  • Use day-old brown rice. This will help the rice stay fluffy and separate when cooked.
  • Cook the rice and broccoli in separate pots. This will help prevent the broccoli from overcooking.
  • Add the broccoli to the rice during the last 5 minutes of cooking. This will help the broccoli retain its bright green color and crisp texture.
  • Season the rice and broccoli with your favorite spices and herbs. Some good options include salt, pepper, garlic powder, onion powder, and paprika.
  • Serve the rice and broccoli immediately, or store it in an airtight container in the refrigerator for up to 3 days.

Conclusion:

Brown rice and broccoli is a healthy and delicious side dish that can be served with a variety of main courses. It is also a good source of fiber, vitamins, and minerals. By following the tips above, you can make sure that your brown rice and broccoli turns out perfect every time.
