- Make the toffee: Line a baking sheet with parchment paper.
- In a medium nonstick saucepan over medium heat, melt the butter, brown sugar, and salt, stirring until evenly incorporated. If there are grainy lumps or if the fat starts to separate, add a couple splashes of water and stir vigorously to emulsify. Continue to cook, stirring constantly, until the mixture reaches 290°F (143°C), about 10-15 minutes.
- Pour the toffee onto the prepared baking sheet and spread out slightly with a spatula. Freeze until ready to use, about 30 minutes.
- Make the cookie dough: Add the butter to a medium nonstick saucepan over medium-high heat. Cook, stirring occasionally, until the butter turns dark brown and smells nutty. Watch carefully so the butter does not burn. Remove the pot from the heat.
- Add an ice cube to the butter and slowly let it melt. It may froth and bubble. Add the remaining 3 ice cubes and gently stir until melted.
- In a large bowl, combine the granulated and brown sugar, espresso powder, salt, and baking soda.
- Pour the brown butter into the sugar mixture and mix until combined. Don't worry if it looks separated.

This will allow the flavor to develop and the dough to dry out a little as it rests, which will result in less spread when it bakes.
- When ready to bake, preheat the oven to 325°F (163°C). Line 2 baking sheet with parchment paper.
- Arrange the cookies on the baking sheets, leaving at least 2 inches (5 cm) of space between the cookies and away from the edges of the pan.
- Bake until the cookies are golden brown with crispy edges, but are still slightly soft in the center, 18-20 minutes.
- Immediately sprinkle the cookies with flaky sea salt. then let cool completely. The cookies will be very soft at first but will set after they are fully cooled.

- Place a rack in the center and upper third of the oven and preheat to 350 degrees F. Line two baking sheets with parchment paper. On one baking sheet, spread out shredded coconut. Steps:
- 1. Cream together shortening, sugar, egg and vanilla.
- 2. In a separate bowl, sift together flour, baking soda and salt.
- 3. Mix the dry with the wet ingredients.
- 4. Use a cookie scoop or a 2 Tablespoon measuring spoon to scoop and drop cookies onto a cookie sheet.
- 5. Bake at 375 degrees for 8-10 minutes. Remove from oven and cool.
- 6. Put a 1/4 cup of butter into a sauce pan over medium-medium high heat. The butter will melt and then come to a boil.
- 7. Allow the butter to cook until the bubbles have died down and you are left with a brown butter.
- 8. Add in powder sugar a little at a time. After the sugar has been mixed in, add about a teaspoon of water so the frosting becomes a spreading consistency. If the frosting is watery or it appears the sugar hasn't absorbed all of the butter, add more powedered sugar.
- 9. When the cookies have cooled, gently frost the cookies with the brown butter frosting.
BROWN BUTTER OATMEAL CHUNK COOKIES
Steps:
- Heat a small saucepan over medium-low heat and add butter. Whisking constantly, cook butter until bubbly and until small brown bits appear on the bottom of the pan - about 5-6 minutes. Watch closely and immediately remove the butter from the heat, whisking for an additional 30 seconds or so. Set aside and let cool COMPLETELY. Note: It does not need to solidfy at all, but it should not be warm to the touch. In a bowl, combine flour, salt, baking powder, oats and cinnamon, mixing, then set aside. Once butter has cooled, add to a large bowl. Whisk in sugars, stirring until smooth. Add in egg and vanilla, whisking until smooth once again. Slowly begin to stir in dry ingredients, using your hands if necessary (I always do) to bring dough together. If you find that the dough still won't come together, add in milk 1 tablespoon at a time (I rarely have to do this.) Fold in chocolate chips, distributing them evenly. Refrigerate dough for 30 minutes. Preheat oven to 375 degrees F. Using an ice cream scoop or your hands, form dough into 1 1/2 inch balls. Place about 2 inches apart on a nonstick baking sheet, then bake for 10-12 minutes, or until bottoms and edges are golden. Let cool before serving
SOUR CREAM COOKIES WITH BROWN BUTTER FROSTING RECIPE
