Steps:
- Coat each salmon fillet with the olive oil (just enough to make it shine, not drip) and salt and pepper.
- Preheat grill to medium-high heat and place the salmon skin side up, (even if the skin has been removed) this is VERY important. Then close the lid and allow to cook about 5 to 7 minutes. Check the grill to make sure there are no flame flare-ups and the salmon is cooking evenly, and let cook another 3 to 4 minutes. You are going to let the fish cook about 90 percent on this side. After about 8 to 9 minutes the salmon should turn over easily and allow to finish another 3 to 4 minutes. Remove from grill and serve with your favorite side dishes. The entire cooking time should be about 10 to 12 minutes.
SWEET AND SPICY GRILLED SALMON
The decadent-tasting "good" fat in salmon complements the sweet-spicy Buffalo glaze. The skin gets caramelized and crisp on the grill as the sauce drips onto it. It's delicious, but can be discarded to save fat and calories. (The numbers below include the skin.) A crisp and refreshing celery slaw is dressed with the same sauce, made creamy with light mayo, and brightened with onions and chives.

Steps:
- Preheat an outdoor grill or grill pan on medium high.
- Mix together the hot sauce, brown sugar, paprika and cayenne in a small bowl. Transfer 1 tablespoon of the mixture to a large bowl and whisk in the mayonnaise; set aside the rest of the sauce. Add the chives, celery and onions to the bowl with the mayonnaise and toss well.
- Sprinkle the salmon with salt and pepper. Brush the grill grate lightly with oil. Lay the salmon on the grill, skin-side up, and cook until distinct grill marks appear and the salmon releases easily from the grate, 2 to 3 minutes. Turn and brush the fish with some of the reserved sauce. Continue to cook the fish, brushing the pieces periodically with the sauce, until the salmon fillets are glazed and just cooked through, 13 to 15 minutes more.
- Transfer the fillets to individual plates and serve with the celery slaw.
Tips:
- Choose a fresh, high-quality salmon fillet for the best flavor and texture.
- To ensure even cooking, make sure the salmon fillet is of uniform thickness.
- The pineapple-based marinade not only adds a sweet and tangy flavor to the salmon, but also helps to tenderize it.
- For a more pronounced spicy flavor, use a hotter pepper sauce or add a pinch of cayenne pepper to the marinade.
- Broiling the salmon allows for a quick and easy cooking method that results in a crispy exterior and a tender, flaky interior.
- Keep an eye on the salmon while it is broiling to prevent overcooking.
- Serve the salmon immediately with your favorite sides, such as steamed vegetables, roasted potatoes, or a fresh salad.
Conclusion:
This broiled sweet and spicy salmon with pineapple is a flavorful and easy-to-make dish that is perfect for a weeknight meal or a special occasion. The pineapple-based marinade infuses the salmon with a sweet and tangy flavor, while the spicy pepper sauce adds a touch of heat. Broiling the salmon results in a crispy exterior and a tender, flaky interior. Serve with your favorite sides for a complete and satisfying meal.
