Categories     Vegetables

Number Of Ingredients 7

4 medium tomatoes
1 tsp kosher salt
freshly ground black pepper to taste
4 tsp olive oil, extra virgin
4 Tbsp marjoram, thyme, oregano or rosemary, chopped
4 Tbsp fresh breadcrumbs
4 tsp parmigiano-reggiano, grated

Steps:

  • 1. Cut off a half-inch slice from the stem end of each tomato. Remove any remaining core. Season the cut ends of each tomato with ¼ teaspoon salt. Place cut end down on a rack or paper towel. Let drain for 30 minutes. Blot dry with a paper towel.
  • 2. Preheat oven broiler. Line a broiler pan with foil. Place tomatoes cut side up on the prepared pan. Season with pepper to taste. Sprinkle 1 tablespoon of fresh herbs over the top of each tomato. Drizzle each tomato with 1 teaspoon olive oil. Broil until hot, and the tops begin to brown, 5 to 7 minutes.
  • 3. Combine bread crumbs and cheese. Divide evenly among the tomatoes. Broil until the cheese is melted, 30 seconds to 1 minute. Serve immediately.

Tips:

  • Choose ripe, firm tomatoes for stuffing. This will help them hold their shape and prevent them from becoming too soft.
  • Use a variety of fillings to create different flavor combinations. Some popular options include rice, ground beef, sausage, vegetables, and cheese.
  • Season the filling well before stuffing the tomatoes. This will help to ensure that the tomatoes are flavorful throughout.
  • Pack the filling tightly into the tomatoes, but do not overfill them. This will help to prevent the tomatoes from splitting.
  • Place the stuffed tomatoes in a baking dish and add a small amount of water or broth to the bottom of the dish. This will help to prevent the tomatoes from drying out.
  • Broil the stuffed tomatoes until they are tender and the filling is cooked through. This will usually take about 20-25 minutes.

Conclusion:

Broiled stuffed tomatoes are a delicious and easy-to-make dish that can be enjoyed as a main course or side dish. They are also a great way to use up leftover rice, ground beef, or sausage. With a few simple tips, you can create a delicious and impressive dish that your family and friends will love.
