BROILED SOLE FILLETS WITH GARLIC HERB SAUCE

Broiled Sole Fillets With Garlic Herb Sauce image

Make and share this Broiled Sole Fillets With Garlic Herb Sauce recipe from Food.com.

Provided by swirlycinnacakes

Categories     Very Low Carbs

Time 30m

Yield 4 serving(s)

Number Of Ingredients 6

1/3 cup olive oil
1/4 cup lemon juice
1/2 teaspoon garlic, minced
1/4 cup fresh parsley or 1/4 cup fresh dill, minced
salt and pepper
1 1/2 lbs firm sole fillets

Steps:

  • Preheat the broiler.
  • Grease a baking sheet.
  • Whisk together the oil, lemon juice, garlic and parsley in a small bowl.
  • Season to taste with salt and pepper.
  • Arrange the fillets on the prepared baking sheet.
  • Drizzle with some of the flavored oil.
  • If the fillets are less than 1/4 inch thick, broil for 2 to 4 minutes, until the fish is firm and barely cooked through.
  • If the fillets are thicker, broil for 8 to 10 minutes per inch of thickness.
  • Serve hot.

Tips:

  • Choose fresh and firm sole fillets: Look for fillets that are plump and have a slight bounce to them. Avoid fillets that are thin, mushy, or have a fishy smell.
  • Use a well-seasoned cast-iron skillet: A well-seasoned cast-iron skillet will help to evenly cook the fish and prevent it from sticking. If you don't have a cast-iron skillet, you can use a nonstick skillet.
  • Sear the fish fillets for a few minutes before broiling: This will help to create a crispy crust on the outside of the fish while keeping the inside moist and flaky.
  • Don't overcook the fish: Sole is a delicate fish, so it's important to cook it only until it is opaque in the center. Overcooked fish will be dry and tough.
  • Serve the fish immediately with your favorite sides: Broiled sole is delicious served with roasted vegetables, mashed potatoes, or a simple green salad.

Conclusion:

Broiled sole with parmesan-olive topping is a simple yet delicious dish that is perfect for a weeknight meal. The fish is cooked quickly and easily, and the parmesan-olive topping adds a delicious flavor and crunch. Serve the fish with your favorite sides for a complete meal that the whole family will enjoy.
