BROILED RED SNAPPER WITH ZA'ATAR SALSA VERDE
Steps:
- Toast pine nuts in a dry small skillet over medium-low heat, tossing often, until golden and fragrant, about 3 minutes. Transfer to a cutting board. Let cool, then coarsely chop.
- Heat broiler. Season flesh side of snapper fillets with salt and pepper, then sprinkle with coriander. Drizzle 2 Tbsp. oil onto a small rimmed baking sheet and place fish, flesh side down, on top. Drizzle skin side with 2 Tbsp. oil; season with salt and pepper. Broil until skin is crisp and browned and flesh is cooked through, 8-10 minutes. Remove fish from broiler and let rest 5 minutes.
- Meanwhile, mix together cilantro, parsley, garlic, za'atar, red pepper flakes, and remaining ½ cup oil in a small bowl; season salsa verde with salt and pepper.
- Transfer fish to a platter, placing skin side up. Stir lemon juice, banana peppers, and pine nuts into salsa verde and spoon over fish.

Tips:
- To ensure the snapper fillets cook evenly, make sure they are of uniform thickness. If necessary, use a sharp knife to trim the fillets to an even thickness.
- If you don't have a broiler pan, you can use a regular baking sheet lined with parchment paper or aluminum foil.
- Be careful not to overcook the snapper fillets. They should be cooked through but still flaky. Depending on the thickness of the fillets, this will take about 8-10 minutes.
- The cilantro sauce is a great way to add a bright, fresh flavor to the snapper. If you don't have cilantro on hand, you can substitute parsley or basil.
- Serve the snapper with your favorite sides. Roasted vegetables, rice, or mashed potatoes are all good options.
Conclusion:
Broiled snapper with cilantro sauce is a delicious and easy-to-make dish that is perfect for a weeknight meal. The snapper is cooked to perfection in the broiler and the cilantro sauce adds a bright, fresh flavor. This dish is sure to be a hit with your family and friends.
