1/3 cup all-purpose flour
2 tablespoons nonfat dry milk powder
1 pound ground sirloin, dry-aged if possible
1/2 teaspoon kosher salt
1 medium yellow onion, diced
2 teaspoons plus 1 tablespoon clarified butter
1 pint button mushrooms, stemmed and sliced
3/4 cup low-fat milk
1/3 cup red wine
1 beef ramen flavor packet

Steps:

  • Whisk the flour and milk powder together in a small bowl.
  • Divide the beef into 4 oval patties approximately 3 by 4 inches. Season both sides with the salt and dredge in the flour mixture. Set on a wire rack to rest at room temp.This is to keep the surface of the meat as dry as possible.
  • Heat a large heavy saute pan over medium-high heat and saute the diced onion in 2 teaspoons of the clarified butter. When the onion is brown and soft, invite the mushrooms to the pan and cook until the mushrooms brown and reduce by half.
  • Transfer the mushroom mixture to a plate and add the remaining 1 tablespoon clarified butter to the pan. Once melted, add the patties and cook for 4 minutes on the first side.
  • Meanwhile, whisk together the milk, red wine, and beef flavor packet in a separate bowl.
  • Flip the patties and cook for 2 minutes on the second side. Add the mushroom mixture back to the pan, distributing it evenly around the beef patties.
  • Pour in the milk mixture, cover, reduce the heat to medium, and simmer for 10 minutes to thicken the sauce.

1 lb ground beef (90% lean)
1/2 onion (finely diced)
2 garlic cloves (minced)
1/3 cup panko bread crumbs
1 large egg
1 ½ tsp Worcestershire sauce
2 tsp mayonnaise
1 tsp sea salt
½ tsp black pepper
1 ½ tsp Italian seasoning
1 Tbsp ketchup
1 ½ tsp milk ((whole milk or any kind))
2 tsp Dijon mustard
1 Tbsp olive oil (to sautee)
1/2 yellow onion (finely diced)
1 Tbsp unsalted butter
8 oz brown mushrooms (sliced)
2 garlic cloves (minced)
2 Tbsp all-purpose flour
1 1/2 cup beef broth (+ 1/2 cup water)
½ tsp Worcestershire sauce
½ tsp Dijon mustard
2 tsp ketchup
¼ tsp sea salt
⅛ tsp ground black pepper

Steps:

  • In a bowl combine all of the ingredients for the beef patties (except the oil). Mix until well incorporated and shape into 4 oval or round patties flattening the center for even thickness throughout.
  • Heat 1 Tbsp oil in a non-stick pan, once hot, add patties to the skillet and cook until patties are golden brown on both sides and fully cooked. Remove the patties from the skillet and cover to keep warm.
  • Sauté ½ onion (you can also slice onion into thin slices, whatever your personal preference is) in the same skillet. Once the onion starts to become tender, add the garlic and butter and mix.
  • Add the mushrooms and sauté until browned, mixing frequently. Lightly season with salt and pepper.
  • In a bowl, whisk together all of the remaining gravy ingredients: 2 Tbsp flour, 1 1/2 cups broth, 1/2 cup water, 1/2 tsp Worcestershire, 1/2 tsp dijon, 2 tsp ketchup, 1/4 tsp salt, and 1/8 tsp pepper. Pour into the mushrooms and cook until the gravy thickens.
  • Add the patties back to the pan and completely cover with the gravy and mushrooms and cook just until patties are heated through.

1 pound of Ground Round Beef
1/2 teaspoon of Black Pepper
1 teaspoon of Salt
1/2 teaspoon of Garlic Powder
1 teaspoon of Worcestershire Sauce
1 whole Egg
1/4 cup of dry Bread Crumbs
2 Tablespoons of Butter
1 large Onion, sliced
2 Tablespoons of Flour
2 cups of Water
2 teaspoons of Beef Bouillon Granules

Steps:

  • In a mixing bowl, combine the Beef, Black Pepper, Salt, Garlic Powder, Worcestershire Sauce, Bread Crumbs and one whole Egg. Stir mixture together well.
  • Shape into 4 equal sized patties.
  • Heat a skillet over medium heat for about a minute, and then add Butter.
  • Place meat patties in skillet and brown on both sides for about 4-5 minutes each. Remove from skillet and set aside.
  • Add the sliced Onion into the skillet, right on top of the browned bits.
  • Reduce the heat and cook the onions on medium-low heat until the onions turn translucent and brown. Don't rush this step. Cook the onions low and slow for about 20-25 minutes.
  • Sprinkle 2 Tablespoons of flour over the onions. Stir. Let cook and brown for about 2 minutes.
  • Add 2 cups of warm Water. Stir well. Raise the heat back up to about medium.
  • Add 2 teaspoons of Beef Bouillon Granules. Stir Well.
  • Place the meat patties back in the pan. Cover. Reduce heat just a little and let simmer for about 15 more minutes. Remove from heat and serve warm.

1 tablespoon finely chopped onion
1/2 teaspoon salt

3/4 pound ground beef
1 can (4 ounces) mushroom stems and pieces, drained
2 tablespoons butter
3 tablespoons all-purpose flour
1-3/4 cups water
2 beef bouillon cubes
1/4 teaspoon browning sauce, optional
Hot mashed potatoes

Steps:

  • In a medium bowl, combine egg, cracker crumbs, onion, salt, pepper and sage. Add beef and mix well. 2 tablespoons canola oil
1 medium onion, chopped
1 1/2 pounds 80 percent lean ground beef
1 cup fresh bread crumbs
1 tablespoon grill seasoning
1 tablespoon Worcestershire sauce
1 large egg
1/2 (8-ounce) package sliced baby portobello mushrooms
Kosher salt and freshly ground black pepper
1/4 cup all-purpose flour
2 (14-ounce) cans beef broth

Steps:

  • Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the onion and saute until soft, about 6 minutes. Put 1/2 of the onion in a large bowl and the remainder in another bowl. In the large bowl add the beef, bread crumbs, grill seasoning, Worcestershire sauce and the egg. Mix to combine everything well and form the mixture into 5 oval patties. Heat the remaining tablespoon of oil in the same skillet over medium-high heat. Cook the patties until they are well browned, about 4 to 5 minutes per side. Remove the steaks and pour off all but 2 tablespoons the fat. (The patties will not be cooked through and will finish cooking in the gravy.)
  • Put the pan back on the heat, add the mushrooms, and cook for 5 minutes. Add the remaining onions, sprinkle in the flour, and cook for 2 minutes. Add the beef broth and bring it to a boil. 1/2 cup cold water (adds juiciness)
3 tablespoons plain breadcrumbs
1 1/2 tablespoons cornstarch
2 teaspoons baking powder
2 teaspoons beef bouillon powder
2 teaspoons minced onion flakes
2 teaspoons dried parsley flakes
1 1/2 teaspoons Worcestershire sauce (Lea & Perrins)
3/4 teaspoon fresh ground black pepper
1/2 teaspoon soy sauce
1/4 teaspoon ground leaf thyme
3 tablespoons unsalted butter
1/2 cup Spanish onion, cut into 1/4-inch julienne strips
4 ounces fresh mushrooms, cut to 1/8-inch slices

  • PREHEAT indoor grill to medium-high heat; OIL or spray grill surfaces completely with non-stick cooking spray; GRILL beef patties until sear-marks are obtained; TURN patties and repeat process (if using a press-type closable grill, sear without turning), searing until center of each beef patty is still a little pink, not quite done.

  • STOVETOP FINISH METHOD: Simmer over low heat for 10 minutes. CAREFULLY turn steaks with a spatula. Simmer an additional 10 minutes until steaks are steam-cooked and tender.
  • OVEN FINISH METHOD: Transfer oven-safe large heavy saucepan to preheated 350 F oven. Bake patties uncovered for 20 minutes, immersed in gravy.
