CHICKEN AND POLENTA WITH BROCCOLI

Chicken and polenta with broccoli image

This simple 15 minute chicken and polenta with broccoli looks fancy but can't be easier to make (and you squeeze in those veggies too!)

Provided by Rachel Ballard

Categories     Main Course

Time 25m

Number Of Ingredients 12

2 large boneless (skinless chicken breasts sliced half through their thickness to make 4 thinner portions)
1 tablespoon Italian seasoning
1/2 teaspoon salt and 1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1 tablespoon butter
1 tablespoon olive oil
1 18- ounce roll pre-made polenta
3/4 cup chicken broth
1/2 teaspoon salt
1/4 teaspoon red pepper flakes (optional)
1/3 cup grated parmesan cheese
1 bag steamable broccoli florets

Steps:

  • Start by cooking the chicken:
  • Mix the Italian seasoning, salt, pepper and garlic powder together and sprinkle evenly over both sides of the chicken.
  • Heat a nonstick skillet over medium high heat and add the butter and oil. When the butter has melted and the skillet is hot, add the chicken and sauté until golden brown--about 5-6 minutes per side. Transfer to a plate and cover with foil.
  • Add the polenta to a medium saucepan, breaking it up with your fingers as you add it. It's okay if there are lumps, they will cook out.
  • Add the chicken broth, salt, and red pepper flakes if you are using them and stir well.
  • Bring to a simmer and mash out any lumps, stirring often until the polenta is smooth--about 6 minutes or so. Add the cheese and stir to combine. Turn off the heat and set aside.
  • Steam the broccoli according the package directions, drain.
  • Serve by laying 1/2 cup of polenta on a plate, add broccoli and top with sliced chicken. Serve warm.

HOW TO MAKE PERFECT POLENTA

How to Make Perfect Polenta image

Polenta is nothing more than coarsely ground cornmeal. The classic ratio is 1 part polenta to 4 parts water, but I like to measure the polenta just a little scant of a full cup. I often use chicken broth instead of water. It's a perfect base for any kind of saucy meat or mushroom ragout.

Time 55m

Yield 4

Number Of Ingredients 5

4 cups water
1 teaspoon fine salt
1 cup polenta
3 tablespoons butter, divided
½ cup freshly grated Parmigiano-Reggiano cheese, plus more for garnish

Steps:

  • Bring water and salt to a boil in a large saucepan; pour polenta slowly into boiling water, whisking constantly until all polenta is stirred in and there are no lumps.
  • Reduce heat to low and simmer, whisking often, until polenta starts to thicken, about 5 minutes. Polenta mixture should still be slightly loose. Cover and cook for 30 minutes, whisking every 5 to 6 minutes. When polenta is too thick to whisk, stir with a wooden spoon. Polenta is done when texture is creamy and the individual grains are tender.
  • Turn off heat and gently stir 2 tablespoons butter into polenta until butter partially melts; mix 1/2 cup Parmigiano-Reggiano cheese into polenta until cheese has melted. Cover and let stand 5 minutes to thicken; stir and taste for salt before transferring to a serving bowl. Top polenta with remaining 1 tablespoon butter and about 1 tablespoon freshly grated Parmigiano-Reggiano cheese for garnish.

SAUTEED BROCCOLINI WITH GARLIC

Sauteed Broccolini with Garlic image

Categories     Garlic     Side     Sauté     Vegetarian     Quick & Easy     Broccoli     Fall     Vegan     Boil     Gourmet     Sugar Conscious     Kidney Friendly     Pescatarian     Paleo     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher

Yield Makes 6 servings (as part of main course)

Number Of Ingredients 5

1 1/2 lb Broccolini (sometimes called baby broccoli; 3 bunches), ends trimmed
1/4 cup olive oil
2 garlic cloves, finely chopped
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Cook Broccolini in a 6- to 8-quart pot of boiling salted water until stems are crisp-tender, about 5 minutes, then drain in a colander.
  • Heat 2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté half of garlic, stirring, until pale golden, about 30 seconds. Add half of Broccolini, 1/4 teaspoon salt, and 1/8 teaspoon pepper and cook, stirring, until heated through, about 2 minutes. Transfer to a serving dish and repeat with remaining ingredients.

Tips:

  • Use good quality polenta. This will make a big difference in the final product. Look for a polenta that is made from 100% stone-ground cornmeal.
  • Cook the polenta according to the package directions. This will ensure that it is cooked properly and has the right consistency.
  • Let the polenta cool completely before slicing it. This will help it to hold its shape when it is grilled.
  • Use a sharp knife to slice the polenta. This will help to prevent it from crumbling.
  • Grill the polenta sticks over medium heat. This will help them to cook evenly without burning.
  • Serve the polenta sticks immediately with your favorite dipping sauce.

Conclusion:

Broiled polenta sticks are a delicious and easy appetizer or snack. They are perfect for parties or potlucks. With a few simple ingredients and a little bit of time, you can make these tasty treats at home. So next time you are looking for something different to serve, give broiled polenta sticks a try!
