Created this last night in the (desperate) phase one of the South Beach Diet. TERRIFIC fish, I love orange roughy anyway, but this was really yummy! Cooking times and amounts are very much approximated, as I am reconstructing this based on my memory of preparing it last night. Also, you may substitute any white fish in place of orange roughy.

BROILED ORANGE ROUGHY

Broiled Orange Roughy image

You can use perch, cod, whiting, or any other raw fish that comes in filets.

Provided by Teresa Malkemus

Categories     Fish

Time 17m

Number Of Ingredients 4

orange roughy; enough for one filet each.
2 Tbsp melted butter
1-2 tsp concentrated lemon juice
salt and pepper to taste

Steps:

  • 1. Let fish thaw then place on a lightly greased baking sheet.
  • 2. Mix melted butter and lemon juice together. Spread over each filet with a brush or spoon.
  • 3. Set oven temperature to broil and insert the baking sheet. After two minutes, pull out the baking sheet and turn over filets. Baste with lemon butter. Re-insert into the oven and broil until tender and flaky.

Tips:

  • Choose fresh orange roughy fillets. Look for fillets that are firm and have a bright orange color. Avoid fillets that are slimy or have a strong fishy smell.
  • Thaw frozen orange roughy fillets properly. If you are using frozen fillets, thaw them in the refrigerator overnight or under cold water for 30 minutes. Do not thaw them at room temperature, as this can promote the growth of bacteria.
  • Season the fillets generously. Orange roughy has a mild flavor, so it is important to season it well. Use a variety of spices, such as salt, pepper, garlic powder, and paprika.
  • Broil the fillets for 8-10 minutes per side, or until they are cooked through. The fillets are done cooking when they are opaque throughout and flake easily with a fork.
  • Serve the fillets immediately with your favorite sides. Orange roughy is delicious served with roasted vegetables, mashed potatoes, or rice.

Conclusion:

Broiled orange roughy is a quick and easy way to prepare a healthy and delicious meal. The fish is low in fat and calories, and it is a good source of protein, omega-3 fatty acids, and vitamins. By following these tips, you can ensure that your broiled orange roughy is cooked perfectly and is full of flavor.
