Time 40m

Yield 6 servings

Number Of Ingredients 14

6 flounder or sole fillets (1 3/4 pounds total)
1 cup all-purpose flour
Kosher salt and freshly ground black pepper
2 extra-large eggs
1 1/4 cups seasoned dry bread crumbs, such as Progresso
Unsalted butter
Good olive oil
6 ounces arugula or mixed salad greens for 6
Lemon Vinaigrette, recipe follows
2 tablespoons drained capers
Freshly grated Italian Parmesan cheese, lemon juice, and fleur de sel, for serving
1/4 cup freshly squeezed lemon juice
1/2 cup good olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 250 degrees F and place a sheet pan in the oven.
  • Dry the fish on both sides with paper towels. Combine the flour, 2 teaspoons salt, and 1 teaspoon pepper on a dinner plate. In a low, shallow bowl, whisk the eggs with 1 tablespoon water. Put the bread crumbs on another plate. Dredge the fish on both sides in the seasoned flour and dust off the excess. Dip both sides into the egg mixture and, finally, dredge both sides in the bread crumbs.
  • Heat 1 tablespoon butter and 1 tablespoon olive oil in a large (12-inch) saute pan and cook 2 fillets at a time over medium to medium-high heat for 2 to 3 minutes on each side, until cooked through. Transfer the fish in one layer to the sheet pan in the oven. Add more butter and oil and cook the rest of the fillets, transferring them to the sheet pan as they're done. Toss the arugula with enough Lemon Vinaigrette to moisten. Place one fillet on each plate and pile the arugula salad on top. Heat the capers in the saute pan for 30 seconds and sprinkle over the fish and salad. Sprinkle with grated Parmesan, a squeeze of lemon juice, and the fleur de sel. Serve hot.
  • In a small bowl or measuring cup, whisk together the lemon juice, olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper.

BROILED FLOUNDER (SO EASY!)

Broiled Flounder (So Easy!) image

This is one of the easiest ways to prepare fish. We ate lots of flounder growning up. I say that tongue-in-cheek. We actually did eat lots of fish, but for some reason when she was really little my baby sister declared the only fish she liked was flounder. So whenever we had fish, no matter what kind it was, if somewhat asked what kind of fish it was we always answered, "Flounder (wink, wink)."

PARMESAN BROILED FLOUNDER

Parmesan Broiled Flounder image

Make and share this Parmesan Broiled Flounder recipe from Food.com.

Provided by Julesong

Categories     Broil/Grill

Time 15m

Yield 4 serving(s)

Number Of Ingredients 8

2 lbs flounder fillets or 2 lbs other white fish fillets
2 tablespoons lemon juice (for a nice twist, try lime juice!)
1/2 cup parmesan cheese
1/4 cup butter, softened
3 tablespoons good quality mayonnaise (Best Foods, Hellmann's, or Vegenaise)
3 green onions, chopped
1/4 teaspoon salt
1 dash hot sauce, to taste

Steps:

  • Place fillets in a single layer on a lightly greased or pan sprayed, shallow oven-to-table type broiler pan. Brush with lemon juice.
  • In a small bowl, combine remaining ingredients to make the cheese topping mixture. Set aside.
  • Broil fillets 4 to 6 minutes or until fish flakes easily when tested with a fork. (Time will depend on the thickness of the fillets and temperature of your oven/broiler.).
  • Remove fillets from oven. Spread with Parmesan topping.
  • Broil an additional 30 seconds or until cheese is lightly browned and bubbly (be careful to watch it, or it can burn).
  • Garnish with lemon twists and parsley, if desired.
  • Note: Mushy cooked fish is a result of either 1) overcooking/overheating, or 2) over-marinating (which, science-wise, is another method of partial cooking, depending on the marinade). Since the flounder in the recipe is not marinated, if the fish comes out mushy I suspect the results are the from overcooking. Either the fish was left under the broiler for too long, the temperature of the broiler is too high, or the rack on which the the pan placed under the broiler is too close to the heat.

Tips:

  • For the best results, use fresh flounder fillets. If you can't find fresh flounder, frozen flounder fillets will also work, but thaw them completely before cooking.
  • Make sure the mustard-herb crust is evenly distributed over the fish fillets. This will help to ensure that the fish is evenly cooked and flavorful.
  • Broil the fish fillets for 5-8 minutes per side, or until they are cooked through. The fish is cooked through when it flakes easily with a fork.
  • Serve the broiled flounder fillets immediately with your favorite sides. Some good options include roasted vegetables, mashed potatoes, or rice.
  • To make the mustard-herb crust, you can use any type of mustard you like. Dijon mustard is a good option, but you could also use yellow mustard or brown mustard.
  • If you don't have any fresh herbs on hand, you can use dried herbs instead. Just be sure to use half the amount of dried herbs as you would fresh herbs.
  • You can also add other ingredients to the mustard-herb crust, such as bread crumbs, grated Parmesan cheese, or chopped nuts.

Conclusion:

Broiled mustard-crusted flounder is a delicious and easy-to-make meal. The mustard-herb crust gives the fish a flavorful and crispy coating, while the tender and flaky fish inside melts in your mouth. This dish is perfect for a quick and easy weeknight meal or for a special occasion.
