GRILLED CRAWFISH WITH SPICY TARRAGON BUTTER

Grilled Crawfish with Spicy Tarragon Butter image

Provided by Bobby Flay

Categories     side-dish

Time 30m

Yield 6 servings

Number Of Ingredients 7

5 pounds live crawfish (Select or True Select)
Kosher salt
3 sticks unsalted butter, slightly softened
1/4 cup hot sauce, such as Tabasco
1/4 cup chopped fresh tarragon
1/4 teaspoon cayenne powder
Freshly ground black pepper

Steps:

  • Add the crawfish to a large pot of salted boiling water. Cook for about 30 seconds. Shock the crawfish in a bowl filled with ice water.
  • Cut through the shell on the belly side the entire length of the crawfish. This will help the meat cook evenly. Remove the vein along the body as well as the sack behind the eyes. Rinse thoroughly.
  • Combine the butter, hot sauce, tarragon and cayenne in a food processor. Process until smooth. Season with salt and pepper.
  • Prepare a charcoal grill for direct grilling. Place the crawfish in a grill basket and grill until the shell turns bright red and the meat is opaque, about 5 minutes, shaking the grill basket occasionally.
  • Meanwhile, melt the spicy tarragon butter in a saucepan or skillet. Remove the crawfish to a large platter or shallow bowl, season with salt and pepper and drizzle with the melted butter. Serve immediately.

GRILLED SALMON CUBES WITH TAWNY PORT-TARRAGON SAUCE

Grilled Salmon Cubes with Tawny Port-Tarragon Sauce image

Provided by Food Network

Categories     appetizer

Time 2h15m

Yield 8 first course servings

Number Of Ingredients 9

3/4 pound salmon steak (1 1/4 inches thick)
Salt and pepper to taste
1/3 cup tawny port (as dry as possible)
1/4 cup firmly packed, fresh tarragon leaves (no stems)
1 large shallot, minced
1/4 cup beef stock
1 stick (1/2 cup) cold butter
1 teaspoon vegetable oil
Coarse salt for sprinkling the salmon

Steps:

  • Skin and bone the salmon steak. Cut into 8 cubes, each one approximately 1 1/4 inches square. Season well with salt and pepper. Place in a mixing bowl, and add the tawny port. Stir in the tarragon leaves, reserving a few for garnish. Cover and marinate in the refrigerator for 2 to 6 hours (try to marinate it as long as possible).
  • When ready to cook, prepare a charcoal fire. While the fire is getting hot, prepare the sauce. Remove the salmon cubes from the marinade and reserve cubes. Pour the marinade into a small saucepan. Add the shallot and beef stock. Bring to a boil over high heat, skimming off any foam that forms on the surface. Boil the liquid until it is reduced to a glaze. Reduce the heat to low, and begin whisking in the cold butter, 1 tablespoon at a time. (Make sure that the sauce doesn't "break". When all the butter is incorporated, you'll have a smooth, medium-thick, tan-colored sauce.) Strain it into a clean saucepan and keep warm over very low heat, stirring occasionally.
  • When the sauce is almost ready, grill the reserved salmon cubes: First dry them very well, then toss them with the vegetable oil to prevent sticking. Place them on the grill and cook, turning them with tongs, until charred on the outside, still rosy-pink on the inside, about 5 minutes. (Alternatively, you could place the oiled cubes under a preheated broiler, turning, until just done.)
  • Place each salmon cube on a small plate. Sprinkle with coarse salt. Drizzle each cube with a half teaspoon of the sauce (reserve the leftover sauce for another use). Sprinkle each cube with a few flecks of the reserved tarragon leaves, finely minced.

Tips:

  • Choose the right fish: For this recipe, it's best to use a firm-fleshed fish that will hold up well to the heat of the broiler. Some good options include salmon, cod, halibut, and tilapia.
  • Make sure the fish is fresh: The fresher the fish, the better it will taste. Look for fish that is bright and shiny, with no off odors.
  • Cook the fish until it is just cooked through: Overcooking will make the fish dry and tough. The best way to check if the fish is done is to insert a fork into the thickest part of the fish. If the fork comes out easily, the fish is done.
  • Don't be afraid to experiment with different herbs and spices: The tarragon sauce is the perfect complement to the fish, but you can also try other herbs, such as dill, parsley, or basil. You can also add a pinch of chili powder or smoked paprika for a little extra flavor.
  • Serve the fish immediately: This dish is best served hot, so make sure to serve it as soon as it is cooked.

Conclusion:

Broiled fish with tarragon sauce is a delicious and easy-to-make dish that is perfect for a weeknight meal. The fish is cooked quickly and easily, and the tarragon sauce adds a bright and flavorful touch. If you are looking for a new and exciting way to cook fish, this recipe is definitely worth a try.
